Wk 2 Advanced Cooking: Crispy Snail, Garlic Foam + Assorted vegetables; Baked Oysters + Champagne Sabayon, Sea Scallop Carpaccio ~ After two weeks spent at L’Institut Restaurant, it’s nice to be back in a lab!

This weeks topic will be all about seafood and have a practical exam on Friday. Today we worked on all of the shellfish (as much as we could get our hands on at least)! Not pictured were the delicious Mussels Marnière.

I had so much fun plating these dishes but definitely not as much fun eating the “escargot”….I’m still weary about it being a snail but alas it’s considered a delicacy😅

Independent Study Week 4: Beetroot Risotto, Pan Seared Duck with Orange Jus and Toasted Walnuts and Feta for Garnish ✨

This week I continued my focus on Color Theory & Contrast. The vibrant risotto contrasts nicely with the jus as well as the flavors! Beets have a strong earthy and umami flavor which pairs nicely with the bright and rich orange jus😉

For my pictures this week I opted to use natural lighting rather than the traditional studio light set up I had been working with. I love how vibrant the pictures came out and think the natural light helped the elements colors to pop

Spring Sourdough: Carrot “cake” inspired loaf 🥕✨

This delicious sourdough has all of the carrot cake fillings like fresh grated carrots, walnuts, raisins and a spiced sugar swirl!

Surprisingly easy and the only thing missing is some cream cheese frosting 😉

Appetizer: Glazed Rainbow Carrots, Lemon Whipped Herb Ricotta, Roasted Chickpeas
Entree: Sourdough Pita, Shwarma Chicken Thigh, Tzatziki, Cherry Tomato Cucumber Salad, Roasted Pepper Beet Hummus/Turmeric Roasted Garlic Hummus/Hummus
Dessert: Lemon Olive Oil Cake, Whipped Cream Cheese Vanilla Frosting

Sourdough Pita 🌱

Another sourdough recipe but it’s not a loaf…from my dinner party last weekend with friends I stumbled across this delicious sourdough pita recipe ✨

Pita a traditional flatbread originating from the Middle East. It’s fluffy, soft and the perfect addition to your sandwich and wrap game ;)

Happy Spring 🌷🧺🌞 ~ Sourdough Pita, Roasted Red Pepper Hummus, Lemon Pepper Hummus, Tzatziki, and Roasted Garlic Oil with watermelon radish as garnish!

Honestly I didn’t know where I was going with this except that it had been a while since creating a composed plating. So why not have fun with some leftover ingredients I happened to have in my fridge ;)

Both the flavors and colors screamed spring to me and I wanted to portray that in my plating. I wanted the colors to pop and showcase the vibrancy of spring flavors!

Plating has always been my favorite part when it comes to culinary, and I admire the creativity and precision that goes into it!

Blueberry + Lemon Sourdough 🦋🌻

Spring has sprung at Irena’s Kitchen! To start the season off I had to make a sourdough loaf inspired by my favorite flavor combo 😋

This was my first time using sugar in a sourdough loaf and this helped the overall structure and proofing my times! My dough came out perfectly shaped ;)

I ended up using the blueberry paste my coworker had shared with me…so I’ll definitely be recreating this with some fresh blueberries to see the differences!

Chili Oil Crunch x Sourdough ~ can’t beat this flavor combo, the subtle heat from the chili pairs perfectly with the cheddar and scallions…all baked into a fluffy and crispy sourdough bread 🤤

Chili Oil Crunch & Cheddar-Scallion Sourdough 🌶️🥖

If you couldn’t tell I’m in my sourdough era…a new loaf unlocked this week!! This was my first attempt at a dough with additions and this one came out super soft and delicious!

I found the recipe from @littlebbanghouse and it definitely reminds me of delicious scallion pancakes! I also used @traderjoes chili crunch oil and all purpose flour, which is always my go to store for unique and high quality ingredients!

On today’s episode of: Irena’s Sourdough adventures…we have these beautiful Blube’s (🫐) Coffee Cake w/ a Brown Butter Crumble and Sourdough discard 🍰✨

To be quite honest I’m not really sure how much the discard affects the cake, all I know is that I’m not wasting my starter 🤷🏻‍♀️

The cake still has several leavening agents: baking powder/soda and a few eggs so I thought possibly it helps with flavor and texture, but then there’s yogurt for that? Nonetheless it’s still tasty, moist and soft!
