A little update regarding ticket release for 2026: We have had a few things that needed our immediate attention and since we are a small team handling all the administrative work, we needed to postpone the planned release. Rest assured we’re in full swing behind the scenes. 2026 will be inspiring, powerful and thrilling. Thank you for your understanding, and we will share the new release date soon!👁️🌍🌟🧘🏻‍♂️ by @iristherestaurant
It happens, every once in a while, that an uninvited guest makes its way into the salmon farms along the coast of Norway. This majestic creature, a 2,7m long 420kg blue fin tuna hunting for mackerel got lost into one of the pens at @eidefjordbruk site at Ospeneset. A busy day in the kitchen at Iris. Here’s how we handled this catch with respect and care. With guidance from our friends from @nama_bergen, the team dedicated the day to this project, treating every part with respect. Thank you Jas and Kevin for leading the sword, a once in a life time experience for a chef! by @iristherestaurant
It’s getting colder. The air crisp and clear, leaving little doubt that winter is upon us. These days, nothing feels quite as nice as stepping into the warmth after a brisk boat ride. We welcome guests all four seasons. by @iristherestaurant

Dish no 6, Snow Crab Circuit Chitin, a polysaccharide that gives strength and structure to the shells of crustaceans, is the focus of this dish. In cutting-edge research, chitosan, a derivative of chitin, is proving its worth in next-generation batteries. When combined with zinc, it can form biodegradable electrolytes, offering an alternative to the finite metals that power our devices today. One day, the charge in an electric car or the light in a bulb may trace its origin back to the shell of a crab, if we become better at utilizing what would otherwise be discarded. In this serving we showcase the crab meat on top of a crispy blini made from day-old porridge, served with pumpkin, fried chanterelles, & preserved pine cones. 📷: @tobiastorjusen by @iristherestaurant

Dish no.5 - Crack the silence In the 70s, overfishing removed key predators like cod and wolffish from the North Atlantic. Without them, sea urchins took over the seabed and wiped out vast kelp forests along the coast. Today, a part of restoring these ecosystems starts with removing the urchins. Sometimes recovery requires action, not observation. by @iristherestaurant
