This one is SO EASY, yummy & will have you wondering why you haven’t been making it for alllll your friends!🤤 Toffee has been a family staple of the holidays for as long as I can remember. We used to make treat plates as kids and deliver them to neighbors, coworkers and friends - homemade almond roca was the best part!
For the Plain Toffee:
1 stick unsalted butter
1 cup brown sugar (I use cane brown sugar)
1 tsp fine salt
1. Prepare a baking sheet (not glass! It could shatter) lined with parchment paper.
2. Combine butter, brown sugar and salt in a small sauce pan over medium heat. Heat until 300° F (about 10 min) stirring continuously (it can go from done to burnt in SECONDS!). Consistency will be similar to peanut butter.
3. Pour mixture onto parchment lined baking sheet and spread evenly with a wooden spoon or silicone spatula. 4. Allow to cool for 15-20 min.
5. Break into pieces.
For Almond Roca-y Toffee:
Follow steps 1-3 for Plain Toffee
4. Spread chocolate chips of your choice (I used dark) evenly on top of hot toffee. Let sit for 1-2 min to allow the chocolate to melt
5. Spread chocolate evenly across toffee & top with chopped almonds
7. Place in fridge until set - 20 min or so
8. Break into pieces
9. ENJOY👌🏼

Before you come at me for using cold butter AND baking from frozen - baking with room temp butter and then chilling WILL NOT give you the same result. Once butter melts into flour at room temperature, chilling the dough afterward cannot reverse the chemical structure that has already been created. The physical state of the butter when it first interacts with the flour entirely dictates the final texture of your bake.
We love the texture, the variance of color, shape & taste of cold butter cookies👏🏼

This experiment really surprised me!😳🤭
As for taste...
Cold butter is still my go-to. 10/10. Melted butter didn’t have the texture I was looking for. And all the over mixed cookies are more dense than the others.
You can see as they are broken they take a little more force. All cookies were baked at 375° for 14 minutes.

Your mallows melt out & ruin your cookies - I’ve been there😭 Try this at home!
Throw your mini marshmallows in the dehydrator for 2 hours at 156°🤭 They’ll be perfectly crunchy!
The dough around them in the oven hydrates them just enough to get that campfire, toasty feel!
If you don’t have a dehydrator, toss them in your oven! Line a baking sheet with parchment paper.
Spread a single layer of mini marshmallows out on the pan. Place in oven @ 150º-165° (or as low as your oven will go) for 2-3 hours. Check for doneness and remove from oven or return for additional 30 min. Marshmallows should have a crunchy exterior. Store in airtight container (my fav is a mason jar!) if you have extra!
Happy baking🤎🍪

Same ingredients, different result?🤔🍪

🤎Butter Temp! Chilling room-temperature butter dough cannot fully reverse the structural changes that occur during creaming. When cold butter is incorporated into cookie dough, it acts as a solid scaffolding system rather than an instant liquid lubricant, altering the final crumb of the cookie.
🤎Volume (Cups) vs. Weight (Grams) Scooping flour directly with a measuring cup (we did this for YEARS ® )) packs it down, adding up to 20-30% extra flour per cup. If they scooped lightly and you packed yours—or if you used a digital scale to get the exact flour-to-fat ratio needed for height-their dough had too high a fat-to-flour ratio, leading to a greasy puddle.
🤎We only use parchment paper! Silicone mats (like Silpat) insulate the bottom of the cookie and provide a slick surface, causing dough to slide and spread wider.
Parchment paper provides light traction, while greasing a pan directly introduces extra liquid fat to the underside, melting the edges outward almost instantly.
🤎Cornstarch (The Moisture & Gluten Trap)
Cornstarch softens the harsh protein bonds in all-purpose flour. It weakens gluten development just enough to keep the cookie tender, but its primary superpower is moisture absorption.
The Result: During the initial bake phase, cornstarch absorbs excess liquid and fat, thickening the dough structure internally before the butter completely liquefies. This prevents horizontal run and gives you that dense, thick, melt-in-your-mouth center instead of a flat, crispy disk. Adding as little as 1 to 2 tablespoons per batch yields noticeable change in height.
As always, happy baking!🫶🏼🍪🤎

Let’s talk replacements! Extra egg yolks are such a fun one👏🏼 here’s what it does to the dough:
🤎Chewy and Fudgy Texture
The extra fat in two yolks locks in moisture and softens gluten bonds, resulting in a denser, rich, melt-in-your-mouth chewineness.
🤎Enhanced Flavor Profile
Egg yolks house almost all of an egg’s fat and flavor compounds. Adding two yolks intensifies the savory, buttery notes in the dough and makes chocolate, vanilla, or spices taste more prominent.
🤎Rich Golden Color
Yolks contain natural pigments and extra fat/proteins that promote the Maillard reaction. This produces an attractive, golden-brown edge and a deep warm color throughout the cookie.
🤎Natural Emulsification
Egg yolk is packed with lecithin, a natural emulsifier. Using two yolks helps bind the fat and liquid ingredients together more effectively, creating a smoother dough that bakes more evenly.
