TARTARE BATTUTA AL COLTELLO: uno dei piatti identitari de I’Tuscani che da noi ordina anche chi di solito non mangia carne cruda. Battere la tartare con il coltello non è un vezzo, ma determina una differenza abissale nell’esperienza di assaggio. La differenza tra una tartare battuta al coltello e un’altra preparata con il tritacarne è immediatamente visibile e percepibile al palato. Tagliare e battere la carne con il coltello ne preserva le proprietà gustative e nutrizionali: è come sempre è la qualità della materia prima ciò che fa la differenza. La carne per la tartare deve essere tenera, magra e saporita, e servita ad una temperatura fresca (mai fredda).
