I've been falling in love with vermouth heavy cocktails. They're so interesting and underappreciated. This one's a take on a diplomat.

•Apple x tarragon sweet vermouth. Built from a tannic juicy orange wine from @ls.merchants
•Pine nut x red grape dry vermouth. Built from a bold acid driven Chardy from @singlefilewine .

Used Dandelion root as the main bittering agents for these vermouths, and definitely will keep them in my bartending tool kit in the future.

BUZZ OFF

Hay fever made delicious.

Had fun with this one, and had to put in a few kms in my car to sort this drink out.

Started off distilling a few of our favourite local flora: passionfruit marigold, mango lanthana, lemon myrtle. Found out along way you can detoxify lanthana through careful distillation. The more you know.

Bee pollen for a buttery finish. Bee wax for texture. Yuzu vinegar for a stable, delicious, "mandariny" acid.

This stunning piece from @elvira_mckenzie_ceramics features a deep oceanic blue glaze cascading over a textured, sand-like base. It immediately transports me to the coastline, which made it the perfect vessel for my aromatic exhibit, “The Freo Doctor.”
While the drink itself is enjoyable to taste, the real intention behind this exhibit was to isolate and showcase a fresh, sea-like aroma. I wanted guests to understand Ketel One’s role not just in texture and flavour, but also in preserving and carrying delicate aromats.
For my friends outside WA, the “Freo Doctor” is the cool south-westerly sea breeze that rolls across Perth’s coastline and through Cottesloe Beach, where Sculptures by the Sea takes place.

The heart of my cocktail is also my central exhibit. I chose a simple, minimal vessel: a quiet, white cup that mirrors the ingredient it holds: Ketel One on its own.
Unadorned, precise, and beautifully restrained...
My way of celebrating simplicity before the final serve, and no better way of recreating the Nolet tasting tradition than tasting their product by itself:
chilled and undistracted.

This exhibit from Takayuki Nishi carries a quiet minimalism, though beneath its restraint lies a complexity that’s difficult to articulate unless you’re a ceramicist yourself. In much the same way, this eau de vie resists easy definition. It's a distillate of riesling and native citrus, brightened with sunrise lime oleo and fortified with Ketel One to preserve the spirit’s original character and essence. This eau di vie somehow inherited a really fresh minerally saline aroma that still blows my mind whenever I taste and smell it.

The final exhibit is where all elements of the drink resolve into one piece. The ‘Glitch’ glass pays homage to designer and industry icon Kate Gerwin, who created this striking vessel for the ONIS Glassology competition. Its fragmented, mismatched tiers evoke the feeling of a sculptural artwork. It's a piece that feels equally at home in a gallery as it does in service.
