I first heard about the @bocusedor in culinary school, but didn’t really grasp the significance of the event until I started working @mentorbkb. Over 2 days, 24 countries compete in Lyon, France, in what is known to many as the “culinary olympics”. Each team spends 5 hours and 30 minutes preparing a “platter theme” and “plate theme” to a panel of chefs. For those interested, Ment’or is an amazing nonprofit founded by Thomas Keller, Daniel Boulud and Jérôme Bocuse and while sending Team USA to the Bocuse d’Or is just one of our programs, it’s definitely the most exciting at the moment! It’s all going down this week, with Team USA competing on Jan. 26. We’ll be capturing coverage & BTS of the event and sharing a livestream link if anyone wants to see more @mentorbkb! This team of chefs has been training like crazy over the past year and I’m just so proud to watch them show off their hard work. Go Team USA! 🇺🇸🏆❤️ by @janey.cooks

🍑easy galette when you buy too much delicious fruit from @finofarms
🫑teriyaki chicken, snap peas, and shishitos from @titusville.farm (remove chicken once cooked and throw in rest of shishitos until charred in spots. a good one for when it thunderstorms and you can’t use the grill)
🌽a riff on @lideylikes spicy corn and shishito salad from @nytcooking
🌶️ garden tomatoes mixed with @thelentilco lentils over coconut rice. @titusville.farm frizzled scallions on top

1/2 cup flour
Heaping 1/2 cup oats
1/2 cup packed brown sugar
1 teaspoon cinnamon
Pinch salt
6 T cold butter, cut into pieces

This amount works for a small/medium cast iron pan. You can double recipe for a larger 12-inch and always freeze any leftover topping. ✨Butter your dish and toss in some stone fruit and blueberries, sprinkle about a tablespoon of sugar and cornstarch on top. Fruit should mostly fill up pan. Mix all above topping ingredients in a bowl, using your fingers to incorporate the butter. It’s a little messy but fun and gives you the best clumps. Place on preheated grill, cover, turn heat to medium low or low and cook for about 25-30 min.

Grilled Radicchio White Pizza:

1. Grill some radicchio
2. Add whatever else you want on your pizza (you should want ricotta)

First 🌽 of the season! Grilled and sliced off the cob, served with grilled scallions, butter, some garden tomatoes, salt, lime, cilantro, and topped with grilled chicken thighs.

Chicken marinade: coriander, cumin, salt, dijon, lemon, garlic, oil. But you could use any mix of spices or marinade.

Pairing: @grimmales Bright Light and my favorite @food52 ceramic platter 💛 by @janey.cooks
