We are going in the fall flavor in all the ways we know how, and in all the way the garden provides.

It really is so impressive the great variety of produce that @__crazyfarm__ grows, it’s such a joy to work with them all growing season long. It’s amazing to have such amazing farmers markets in cville that give our community access to such bounty and make it so easy to create and anchor what we can grow in the garden.

Landyn and Savannah have been holding it down on the pear front, turning asian pears into pints and pints of pear butter portioned and spread between layers of our jam bars dough.

Tres leches this week is getting a sweet potato caramel twist as a brief break from our apple caramel, which is the simple way of saying we used Crazy Farm sweet potato puree to deglaze a caramel instead of cream, and then used cream to smooooth it out in the vitamix. It has honey notes, and in combination with our limited edition vanilla and toasted milk solids tres leches liquid, might give a little toasted marshmallow sweet potato casserole energy… the brain is still sifting through this one but I think it might be a really solid option for our friendsgiving tea party menu.

Oh, I think I’m on the right track for pan de muerto. I’m nervous to proof and bake them tomorrow but I think I definitely took some steps in the right direction of shaping them this week.

AND we’re stocking our pumpkin snickerdoodle in the cookie baskets @jbirdsupply!! Sesame snickerdoodle snick snuck its way into the baskets last week and I s2g don’t sleep on that one either.

pastry prep photo dump!!

The past few weeks have been a little crazy but the Florosa team has really been working hard to make sure that there’s always desserts in the Florosa fridge @jbirdsupply and working into our fall menu flip as we run through our summer mise en place

Hispanic heritage month is one of our biggest pushes of the year, and with options like the Nicaragauan pico (what I refer to as Nicaragua’s quintessential pastry) and the Salvadoran quesadilla you can really experience Latin American pan dulce in addition to Mexican pan dulce like the concha.

Obviously the basque cheesecake is from Spain, though less obviously the “foccacia” is a Spanish torta in a disguise—a flatbread from Spain dappled with oil and salt and sometimes tinned fish with roots in Northern Africa and the Middle East. We bake ours taller versus free form on a sheet tray in large rounds, which is why I put it more in the foccacia category even though the dough is basically the same.

As always, Florosa does our best to source the majority of our amazing local produce from @__crazyfarm__ and @encanto_homestead, both of which are Hispanic and family owned and operated farms in Virginia.

As for Loaf for Good, we are donating 50% of all proceeds for the rest of the year from our sourdough loaves made with spent grain from @hogwallerbrewing to @sin.barreras.cville WHICH THIS SATURDAY!! Is Cville Sabroso!!! A festival at the Ting Pavillion put on by Sin Barreras to highlight amazing Mexican, Latino, and South American cultures through food, music, dance, arts vendors, and so much more. Sin Barreras does so much in our community for immigration advocacy, language education, la cultura, and helping Hispanic people in Charlottesville.
