How wonderful to meet one of wines most powerful women, Alessi’s Antinori 🫶 The Antinori family has been producing wine for 26 Generations and it’s refreshing to hear the kids are going to continue the business. This is still a family owned empire making everything from value driven wines to Top Super Tuscans. They continue to innovate and grow and have a remarkably positive outlook for the wine business and future generations. I think they might know a thing or two about the ups and downs of the wine world😉

All the wines were spectacular but the Guado al Tasso was most impressive because it has come so far! The Chardonnay from Umbria (Cervaro Della Sala) is remarkable.

Classics are classic for a reason and not a season ✨
.
While wine fads may come and go, the greatest Cabernet Sauvignon blends from the greatest estates continue to thrive and exceed expectations. I had a chance to taste through the 2012 vintage with third generation wine maker @chateauhautbrion_ Jean-Philippe Delmas who is still incredibly hands on.
.
The Domaine Clarence Dillion portfolio is growing to now include Chateau Haut-Brion, Chateau La Mission Haut-Brion and a newish estate (well actually a few parcels) in Saint-Emilion! They have launched Chateau Quinta’s and have their collective sights set on showcasing this unique right-bank terroir.
.
Chateau Haut-Brion has unique savoury and delicate spice notes with expansive acidity and fine dusty tannins. It shows up earlier than most of the top Bordeaux’s and this maybe attributed to the terroir, the balance of more Merlot in the blend or the deft winemaking. Regardless, they are distinct and eternally elegant. 2012 still young but approachable. Chateau La Chapelle de La Mission Haut-Brion 2012 was drinking wonderfully. ✨
.
Thank you for the rare opportunity to learn @noble_estates.
Thank you @barberianssteakhouse …always amazing hosts.

Did you know that not all Prosecco is created equally?
.
Yesterday I had the privilege of chatting and tasting through a selection of Conegliano Valdobbiadene Prosecco Superiore DOCG with a group of wine Pros. Suffice to say this is the largest amount of top Prosecco I have tasted in one sitting. Literally mind blowing 🤯
.
Why are these Prosecco so superior?

🏔 Unique ‘hogback’ geological formations with very diverse soils. Vineyards planted on steep south/south west facing hillsides with high elevations! This is the original area for Prosecco.
.

👋 Hand harvested grapes with up to 600 hours of manual labour performed in these exceptional vineyards helps create focused wines.

🍇 Produced from a min 85% Glera grape (often 100%) that has fresh acidity, bright tree fruit and fresh floral aromas that is delicate and exotic🥂

.
🎻The Charmat method of creating bubbles keeps the wines fresh, floral and primary~while their mineral terroir shows through (extremely diverse soils here too)!
.
🌎 This spectacularly beautiful piece of the world is now a unesco world heritage site and the local farmers are doing everything they can to keep it green (ban on glyphosate for example).
.
Here is hoping we will see more of these in market. Highly recommend you give them a try~worth the splurge.

Special thanks to @townhallbrands and @highacidreds @sipstoronto and @lisareneulrich

A lovey lunch with Thomas Burke MS and @chateaumargaux 🌟
.
While the reds were naturally stunning the real surprise of the line up was the bright, mineral driven white Pavillon Blanc.
Made of 100% Sauvignon Blanc and grown in a 12ha vineyard west of Margaux itself. Mostly larger barrels modestly used new oak lends a bit of extra texture on this steely, lemon-lime focused wine. These dry whites can age and improve ten to twenty years and beyond picking up floral notes and an oily texture.
.
The 2004 Margaux still young but there 1989 was drinking beautifully. Worth the wait indeed for these historical wines to come into themselves.
.

Spoiler alert-a 3rd wine from Chateau Margaux will be coming soon and will be at an affordable (relatively speaking) price point.

Thank you @noble_estates & @barberianssteakhouse

First time in Champagne did not disappoint! So much more to see with around 6000 wineries so I will be back. Meantime if your coming here are a few of my tips:

🥂 Champagne can be drank with every course

🥂The aromatic tour @veuveclicquot is not to be missed

🥂 Bring warm cloths~you will probably spend lots of time in the underground chalk caves and it’s cool and damp (also comfortable shoes)

🥂Book your tours ahead of time~it’s a busy place and the smaller producers are busy people but are worth the effort

🥂Dinning out is amazing~my favourite restaurant is ‘Why not’ in Épernay

🥂Make time to see the La Notre Dame in Reims~whatever your religion (or not) it is spectacular

🥂Great hotels~I highly recommend La Cave de L’Avenue in Épernay

Have you been to Champagne yet?

Calling all Ontario Sommeliers! The 2022 BOSC competition is upon us. Preliminary competition (blind tasting & written theory) are happening Aug 15th. For more information head over @caps.ontario 🍷Both @elsamacdonaldmw and myself vetted all the wines (and of course we too did it blind)!
.
A few great blind wine tasting tips I have learned over the years you may find helpful:

🙏 Be as zen and present as you can be~when you get stressed your body goes into fight/flight mode and your olfactory system will take a hit

⏱Manage your time. Know how much time you have and how many wines/questions you have to get through and manage accordingly

🚫Don’t ‘game’ the system. Treat every wine like an individual exam. Don’t try to figure out what ‘should’ of been in the flight

🧐Be curious about what’s in the glass. Let the wine tell you it’s story and don’t make a snap judgement on it until you have had a chance to go through the grid and listen to yourself-fully

👂Listen to what the structure is telling you. The structure should not lie (acid-tannins-alcohol-body) in combination

📚There is a ton of theory in blind tasting~don’t neglect to understand all the relevant wines of the world and how they are made ect

🍷 If a wine is not immediately speaking to you~that’s ok. It maybe neutral and telling you what is is~by what it’s not. Don’t spiral instead move to the next wine & come back to it

Please feel free to leave any of your pro tips for blind tasting below ⬇️

Good luck to all the competitors and I hope you truly enjoy the journey! If your still considering signing up~do it. It’s a great way to be apart of your community and check in with yourself and your skills 😉

Missing you here @aevans243
