“We’ve got turkey wellington from @marymount_bakehousesg , just bring the sides.” That was our invitation for Christmas dinner.

We assumed there’ll be roasted vegetables and maybe potatoes….but our fab foodie duo turned up with 50 ingredients in various bags and buckets. 💪

So our nua Christmas day was a merry afternoon of professional cutting lessons, practice sessions in the kitchen and lots of cooking and creativity.

How many ways can you zhng your vegetables? More than a 101 ways, I can assure you now ✌🏻

The Spectacular 🎄Sides Menu:
- maple glazed carrots with chilli honey on whipped feta and crushed pistachios 🥕
- pumpkin, brussel sprouts salad with chickpeas, cranberries and bacon🥗
- 🍄 and 🍆 “paella”

Christmas is made more special this boxing day when our friend, MK, dropped by with freshly roasted cacao nibs and a special, off the shelves, coffee blend ( twice honey, twice natural fermentation) from his @squaredog.coffee collection.

We recently met this fellow Singaporean who makes artisanal chocolate @augustchocolate.asia and coffee in Chiang Mai, a craftsman who is fastidiously hands on in all stages of production. He showcases them at his cafe @chocolatecultureclub in Old City Chiang Mai, wh serves some of the best hot chocolate. More of our Chiang Mai adventures later…

We did an impromptu cupping session and loved the brew - lovely mellow acidity, fruity notes and a lingering finish.

Can’t think of a better way to warm up this wintry day ☕️

Off to the fish market with @pasarfishsg 🐟🐠🐡🎣

When I moved to my current hood,
I remember I was so thrilled to be within walking distance to a wet market. Yet for
months, I circled the stalls, feeling lost and folorn. You see, I never had the “go wet market with ur mom/auntie/grandma” experience and when things didn’t have a price tag or explanation, everything became a blur. And after a few vendors growled at me and offered rhetorical answers to my questions, I was convinced maybe I didn’t belong to this wet market world. No one’s gg to teach this wet market noob anything.

When I finally settled into my “regular” stalls, I realised the vendors didn’t always have time or patience to explain either. So most of the time, I ended up with the recognisable (ie: what u can get in a supermarket).

Fish, in particular, was a new, strange world. I usually ended up with the boring batang, salmon, barramundi…but there were so many species at the stall…which I knew nothing about.

So when I read about the fish tours by @pasarfishsg , I knew I had to sign up. Maybe this will make up for
those wet market visits with mom that I never had.

The tour was everything it promised, I had hoped for, and more.

Head honcho Kenny is a true specialist, having worked in WWF and has been working on fish research - he was a treasure trove of undersea knowledge. I took notes, videos, photos - and likely will have to go through the material many more times!

2 hours at tekka market has given me that boost of confidence to speak to my fishmonger, and I’m seriously considering switching to tekka market as my preferred wet market. for one, it features more than 250 species of fishes (as documented), opens only frm 8am (so this not so early bird still gets the goodfish!) and opens till 8pm. And I now know which fishmonger will be able to answer my questions…

I attended their last tour this year, but I highly recommend u sign up for the upcoming ones. Even if u r a chef, there’ll be much u didn’t know.

ps: At the end of the trip, kenny even sprays u with a few lifesaving sprays of febreeze. I went for lunch and to the national museum after ☺️ by @jennytanwrites

Last evening, I was so #blessed to be invited for a tuna cutting experience, centred on a 100kg, 1.6-metre long bluefin tuna sourced from the nutrient-rich waters off Kochi Prefecture in Japan.

With 15 years of mastery in tuna cutting, chef Tomoya Sasakito demonstrated the technique and precision required to fillet the fish, a performance of skill and finesse using a katana-like blade.

We tasted the fatty ‘otoro’ to rare offerings like the forehead, cheek and collar. Thankful to the chef who insisted I tried the ‘nakaochi’, the soft flesh carefully scooped from between the bones. It was served on a piece of seaweed, but i would have happily eaten it on its own!

Kudos to the @culinacomodempsey team for pulling this off!

My #bethelbro @rightthoughtsnactions finally got married, so this deserves a post 🥳

I’m so glad I could make it to the wedding and fulfil the “church coordinator” role he assigned me. I relished ordering brekkie for the helpers (yakun, of course) and overseeing all the set up with the kacang putih man, ice cream cart, photo booth, caterer and packing food!

(Thank u Jesus, that my work assignment got postponed!)

And of course, to witness him and Shyan saying their marriage vows…🥹

I remember the dismal late night coffe shop conversation two years ago when he was telling me about his single for life plans and I had (very prophetically, of course) assured him God has a better vision of his life and greater plans for him than he can imagine.

Looking through the wedding photos, I can only say, God is good - and also the best matchmaker on earth and in heaven.
