Postscript:

The truth is I’m a self taught foodie with a genetic code passed down from generations who have always created and eaten food that looks and tastes amazing to eat. Here’s a bit of an idea about the influences that have shaped my journey and relationship with kai:

“It was normal in our family as kids to hunt our meat, tickle fish, gaff eels, forage edible wild foods like mushrooms, apples, rose hips, crab apples, and watercress that used to grow like crazy at the rest area before the bridge. Our dad was a kaimoana guy too, so we would have sacks of green lips and pāua gathered from trips to the coast which sat under the tap at the back door that he would feed with a running tap each day…”

These days I have a niche specialisation and passion in the gluten free, whole foods, plant based space - delivering food that provides exceptional and extraordinary flavour which is uncomplicated to do. Easy food that is relatable, seasonal, economical and manageable for everyone.

I’m passionate about bringing creative vision, direction and evolution to serve and deliver the best eats, with a whole lot of honest authenticity.

And it’s my business now. Literally:

I am just a little bit passionate about VERY simple humble food that tastes a MILLION bucks and is too easy to eat. Here it is. And it’s intergalactic. If there was a queue out the door and around the block to order one of these, I would get in line stat and wait my turn patiently and quietly.

I copied @chetnamakan for ridiculously amazing potatoes but changed it to suit what was in my cupboard. This is what I did:

Heat a good glug of oil in a pan.
Add @mrsrogersnz 1/2t chilli powder, 1t mustard powder, 3/4t turmeric and 1/2t salt.
Add two sliced spring onions.
Add a bunch of chopped parsley and stalks.
Add one squashed cold steamed potato and cook briefly.
Set aside to cool a smidge.

Add a generously intentional dash of oil to a pan to heat to medium high heat.
Butter slices of @bakeworksglutenfree GF V Goodgut Sourdough and turn over.
Pile on your filling and mould it a bit in the shape of the bread OR for a plain one, pile on crushed, sliced, mashed or chunked up pre cooked potato and a scant twist of salt or two.
Lid on and fry till an incredible golden and aromatic crunchy crust forms on the bread.
Slice into chunks, slices, wedges, triangles, fingers with a nice sharp bread knife.

The philosophy is ‘tasty not tricky’ Genuine and authentic tasty eats that are simple to make. Always gluten free and plant based, but most people don’t even realise!

I welcome you to this place right here where I stand up and deliver, serving you relentless inspiration to give something a try at your house!

It started as a daily food blog during lockdown in 2020 and the truth is, it’s not a fabrication! I’ve always eaten this way: plant based food that hits different.

And it’s manageable! I design and drop a menu when the previous one is finished, and every single thing on it is manageable for a working household.
This is not my day job. It’s just my passion! Just honest to good yum and tasty easy win eats.

It’s about to be like living in a snow globe around here and the mulled wine ingredients are prepped in anticipation: citrus, spices, honey and a decent splash of red wine reduced to a syrup, and later adding a bottle of🍷until warmed through ❄️✨🔥

I use @jamieoliver ‘s recipe and adjust the amounts of spices and honey to sweeten bc if I know one thing for sure from experience, the final result is spoilt by the wrong quantities of star anise and/or cloves and it pushes the medicine tasting envelope too far, which is never my jam 🫶🏽xj
