Epic Salads got a sibling 😍😍😍

Epic Veg is my latest cookbook with @hardiegrantbooks and she’s due for release on June 30th. A Cancer! Which makes sense when you know how comforting and cosy these recipes are. The perfect book to see you through the winter slump 🥦🥕🥬

Somehow it has been A YEAR today since the photoshoot for our book Honeybees. It was the best day with @jess___photo capturing the action and producing the most magical pics we could’ve hoped for. We were also lucky to have @alicehardiegrantbooks and @celiamance on set for their expert creative guidance and had a giggle as we all walked around in bee suits.

Honeybees has been on the shelves for a couple of months now and we’re blown away with the support so far. If you haven’t got yourself a copy yet, pop into your local bookshop or jump online and see the other incredible pics inside. 🐝

It will help, I promise 😘

KALE PASTA, adapted from my latest cookbook Epic Veg, where I use silverbeet and cream, and serve it over a ricotta gnocchi. Delicious, but too much work when you’re sick, sad or tired. This version is simple to make, comforting to eat, and full of nutrients. Recipe below 👇🏻

INGREDIENTS:
1/2 bunch tuscan kale, (approx 150g with woody stems removed) 4‐6 garlic cloves, peeled 60 ml (2 fl oz/1⁄4 cup) extra‐virgin olive oil*
10 basil leaves juice of 1 lemon 1 teaspoon sea salt, plus extra to taste
50 g (13/4 oz/1/2 cup) parmesan, grated, plus extra to serve 200 g cottage cheese
500 g pasta, wholewheat if you’re after more fibre
*swap the olive oil for milk or pasta cooking water if you’re watching your cals

METHOD:
Cook the pasta according to packet directions.

To make the green sauce, bring a large pot of salted water to the boil. Trim any tough ends from the kale stems, and give the leaves a good wash. Once the water is boiling, add the kale leaves and peeled garlic cloves, and blanch for 5 minutes.

Carefully drain the pot over a sieve and set the leaves and garlic aside to cool slightly. Squeeze out any excess water from the blanched leaves, then roughly chop leaves and place in a high‐powered blender along with the blanched garlic, oil/water/milk, basil, lemon juice, salt, parmesan and cottage cheese. Blitz until smooth, then set aside.

Once your pasta is cooked, drain, reserving some of the pasta water to add to the sauce if needed, then add the pasta back to the pot, along with the green sauce. Stir to coat the pasta in the sauce, and thin with reserved pasta water if you need it. Transfer to bowls, top with extra parmesan, and black pepper (@eat_pep 4 eva amen) and devour.

Leftovers keep well for days, and can be eaten as is, or made a little more interesting with the addition of olives + feta or avocado + tomato or any other plants or proteins you may wish to add. Enjoy! And let me know if you make it 💚💚💚

Almond Chile Oil 🤜🏼🤛🏼 Corn Risotto

Thanks @raphrashid @tacotruckmelb for this jar of heat that was waiting for me when I got home from my Eurotrip. It’s so cold I can’t feel my fingers, and my tan is fading fast under too many layers of clothing, but my insides are warm ❤️‍🔥

If you’ve not yet preordered your copy, now is your time to shine my friends 😍 Preorders help authors immensely, because every copy ordered before release date signals strong demand to retailers, which increases the chances of more stock in stores and therefore, better promotion and ultimately, a more successful launch 🙏🏼

Still riding high from the EPIC VEG book launch at @prestonmarketau 🥬🥬🥬

A big thank you to everyone who came by, and an even bigger thank you to the team that helped me pull it off. This event was a true display of community in motion, and without the help of my friends and family, we would have been standing in a big empty room, with no food or fun 😂 An extra special thank you must be shouted from the rooftops to the following incredible humans:

🥬 Cass @edward_and.i for the incredible vision and execution when it came to the veggie installation. I mean, wow! I’m never going to get over those cabbages 😍😍😍
🥬 Julian @julianhocking for swooping in and helping us hang everything when I realised the workload exceeded the time frame we had to do it in. The room would have looked so different (shit) if it was me who hung the curtains and veggies 🍄‍🟫🍅
🥬 Dom & Julie @mnmfruit for supplies all that glorious produce, right down to cutting branches off their personal lemon tree so I could have all the lemons I wanted 😍🍋
🥬 Elise @elise_foodperson for being across the food while I was at the other end of the room signing books. There is no one I trust more when it comes to getting my food to the people, in the way I want it delivered 😜
🥬 My mum, who flew over from NZ to be there for the day, and who got up at 6am to made 120 Leek and Corn pies for me to serve my guests (and also made a second batch of brinjal pickle when I left the first batch on the stove during bedtime, and burnt it) 🍆🍆🍆
