Impala - Aish Baladi

Recently in the space of less than the minute it took me to walk into a room and out of it I overheard @meedu_saad say that he’s not trying to recreate a dish no matter how good it was at the time but more the memory of it.
This bread comes from the memories and stories told to me by Meedu, @kim_songsoo , @road.kill__ and @benjamin__chapman . A collaborative project.

Something soft and fluffy but also airy. Something that puffs up and is baked in a wood oven. A high hydration, wet dough. The scent of the bran that coats the outside of it. Watching people bake their bread in community ovens. The heat.

Daily the bakery team @impala.soho mix starters by hand, weigh ingredients, mix and shape over 30kg of dough that is then baked at high heat. Through these repetitive actions we deepen our understanding of the bread and the process.

We’re privileged to use UK grown and stone milled grains from @duchessfarms and @fieldbakery . The growing in itself and production of the grains (our material) is itself a craft which looks after the soil and provides us with an end product which is more complex and rooted in provenance.

Simultaneously launching my first autumn/ winter collection and only fans account. Is that how artists make money these days? Tried to do a fit check video, they’re even more cringe. Also it’s just this one hand knitted jumper and it’s not for sale sooooooo really I’m just saying ,”look I made a thing”.

Pattern is the @handmade_by_florence learn to knit sweater. And wool is @wooldreamers, Mota, Spanish Merino wool bought from @wildandwoollyshop .

Coco is 3 🎉🎉🎉🎉🎂🎂🎂.

He’s moulting like crazy but hasn’t brought any live animals home recently so that’s a win. He looks cute but actually he’s a bully and he’ll only eat his food now if you drop a couple of dreamies in first. He’s a manipulative son of a bitch who will use a combination of screaming at you and giving you love until he gets what he wants. Animals are the best. by @jo_garner__

Aish Baladi - Life of my country, bread of life. A traditional Egyptian wholewheat flatbread.

It was a challenge to make something I’ve never experienced but with memories and guidance from @meedu_saad and @kim_songsoo ( and some help from YouTube) I think we’ve created something delicious. Our interpretation of this iconic Egyptian staple using an Italian style pre-ferment in the form of a biga, a wholemeal sourdough starter, grains grown and milled in the UK with Mariagertoba from @rosybenson @fieldbakery and spelt and Mulika from @gilchesters @duchessfarms .

Coated in bran and baked quickly at around 400 degrees it’s a pocketed, soft, airy, textural delight with nutty, toasty aromas from the bran. It’s a tear and dip kind of bread.

Cambodia 2026 in short videos.
Phnom Penh - Siem Reap - Kratie - Phnom Penh.

Only a year since the last visit but in many ways a different experience. We’re braver with the foods we try and use of Khmer language (mainly Kan but occasionally me too). In this case it did lead to @thepostgradchef spending a few days in bed with food poisoning but he has survived and maybe won’t order seafood Kuy Teav again in a hurry.
Great to visit Kratie, the street market is maybe my favourite so far . Loved seeing the Irrawaddy dolphins and experience a small part of the conservation that happens in Cambodia. I’ll be aiming for more of that on the next trip.

Buildings of Kratie.

Some of my favourite things about Cambodia (aside from the food) are the colours and the buildings. Kratie was no exception. The other defining feature of our three days there was the market. It seemed to go from early morning until around 10pm with a stream of people and scooters most of the day but especially manic in the morning. We finally realised on this trip that if you want to see/eat the best stuff you’ve got to get up at the crack of dawn. I’ll post market photos another day.
