Probiert Naturweine! 🌱🌙
Lasst euch nicht von dem Begriff abschrecken und denkt bitte bloß nicht, dass jeder Naturalwine ein einziger Fehler im Glas wäre. Natürlich gibt’s solche und solche und es mag auch sein, dass es Produzenten gibt die Ihre eigenen Fehler schnell als Naturprodukt abtun wollen, die Realität ist aber das Naturweine genauso gefällig sein können und vllt sogar teilweise mehr trinkfreudig bieten als Konventionelle.
Die Weinwelt ist zu groß um immer die gleiche Einheitsplöre zu trinken… probiert euch aus und findet euren Style 👌🏼wir helfen euch dabei gern!

Tony Bornard, now at Gụ.

From Pupillin, in the Jura.
Marl soils, long élevage, wines shaped with time and patience.

Savagnin, Poulsard, Trousseau.
Native grapes, handled with precision, often aged for years in barrel, sometimes under voile.

The style is distinctive.
Saline, textured, with depth and energy.
A clear expression of Jura.

Still rarely seen in Vietnam.
We’re happy to share a small selection.

Es gibt sie ja immer wieder mal - auch mit zwei Kleinkindern, Arbeit, Alltag, bla bla bla… Diese Momente, in denen du wieder weißt worum es im Leben geht…. VINOOOOOOO! Dieses Mal waren wir seit langer Zeit wieder an der Mosel um Familie und Freunde (sehr gute Freunde @thewinekai @_janina0890) zu besuchen. Und die beiden haben zuhause auch kulinarisch gleich aufgelegt: Venusmuscheln, Austern, Entenmuscheln, Seeigel, Heilbutt - und als Snack chinesischer Pansen aus der praktischen Snack Tüte 🫵🏼 Klar, dass wir hierfür auch anständigen Rebsaft benötigten. Abgerundet wurde das ganze mit einem Besuch bei @weingut_maximingruenhaus und einem wohlverdienten Schäumchen bei der Wiederankunft in HH. Die Weine:

Who doesn’t know Domaine Bornard wines, even without having tasted them? Its distinctive label, with the orange fox on a white background, is one of the most recognizable on the market. The winery, run by Tony Bornard (@joligoupil) since 2017, stands out for its biodynamic vineyard management, with minimal intervention in pursuit of the most natural wines possible, frequently deviating from established norms.

The “Au fil des générations” cuvée has a special origin: in years when severe frosts significantly reduced production (especially in 2017 and 2019), the Bornards combined the remaining Ploussard grapes from all their family plots into a single batch to produce this wine, making it an exceptional wine with very limited production.

Once in the glass, I found it very fresh, expressive, and captivating, emphasizing the qualities of the variety. On the nose, all the energy of fresh red fruit appears alongside floral and perfumed nuances. On the palate, it has structure, despite being a light red, with length, balance, and fine tannins. In short: a highly addictive wine with a touch of rock ‘n’ roll that captures all the virtues of the Ploussard grape.

As a curiosity, you’ll see our beloved fox on the label, but smaller and pink, below two people toasting. This is meant to reflect the family-oriented nature of this wine and the importance of enjoying it with your loved ones, across generations.

LES GAUDRETTES BLANC/ TONY BORNARD

Les Gaudrettes Blanc es un vino blanco del Jura elaborado principalmente con Chardonnay procedente de viñas cultivadas en biodinámica en Pupillin. Fermenta de forma espontánea con levaduras autóctonas y se cría durante varios meses en barricas usadas, sin filtración ni clarificación, y con muy poco o nada de sulfuroso añadido. El resultado es un vino preciso y vibrante, con notas de fruta blanca, cítricos, mantequilla fresca y una mineralidad marcada, típica de los suelos calcáreos de la zona.

@joligoupil , hijo del pionero Philippe Bornard, representa la nueva generación de viticultores del Jura comprometidos con la pureza y la expresión del terruño. Trabaja sus viñas en agricultura biodinámica, respetando los ciclos naturales y buscando intervenir lo mínimo posible en la elaboración. Sus vinos se caracterizan por su energía, autenticidad y una frescura que refleja fielmente el espíritu de Pupillin.
