Really excited to see @settledowntavern open up for curbside pick. I can't imagine opening a business in the midst of this pandemic but they did and I'm excited for them. What's got me most excited is they made an incredible choice in hiring the most talented chef i know in @joslynmink who makes perfect food and I should know as she worked with me for 5 years both in developing our pastry and preserved goods and then running the butcher shop. 📷 @bastard.dining taken in Settle Down Tavern by @jonnydhunter

The Meats and Sweets box includes two delicious small batch WM Chocolate bars - both dark chocolate, with just the perfect touch of sweetness, one with a delicate mint flavor and the other with the perfect hint of orange. Hello from Underground Meats!
I hope this email finds you well and settling into the new routines. A HEARTFELT THANKS to all of you for your support as we at Underground Meats figure out new work routines and new ways of connecting with our customers in times of existential uncertainty for many small businesses. As you likely know, many in the food service industry are having to lay off their entire workforce -- especially restaurants, small retail shops, and businesses, like ours, that sell largely to restaurants and small retail shops. Over the last few weeks, purchases of the Underground Meats stay-at-home boxes have helped us continue production, keep the lights on, and -- importantly -- helped us keep our staff employed. Always - but especially in the current economic landscape - your choice to source food from us and other small companies makes a very direct and tangible difference in the lives of the individuals who make up these small companies.
This week we are updating our local delivery box to include breakfast items that can be delivered to your residence in the Madison area. Fresh breakfast sausage, ham, and bacon, along with our spreadable salami sobrassada. We hope this helps make your morning meals a little more delicious. We also have a meat and cheese tube on the website that is available for mail order.
In the coming weeks we plan to start posting some recipe ideas that you can use with the products in the deliveries. We will be posting to the underground meats instagram account (@undergroundmeats). Virtual high fives for all of y'all staying at home and heartfelt thanks to health care workers and others who are out there making sure that services are maintained and taking care of what needs to be done.

We've updated our online drop-off offerings to include some new items, including deli meats and cheddarwurst for Madison area delivery. As before, one package includes both fresh and smoked meats and is available for delivery only in the Madison area. The other package is available for shipment anywhere in the USA and includes cured meats as well as other shelf-stable products such as some of our favorite cheeses from Uplands Dairy and Landmark Creamery. Hey friends. Hope y'all are hanging in there. This week, we're finding new ways to break bread together - like holding virtual potlucks and same-menu-dinner-making-via-video-chat parties to keep connected with folks outside of the home. Even virtually shared cooking and meals are good for the soul, it seems. We are looking for the silver linings and finding joy in the minutia. We are checking on friends and family. We are remembering to be patient with one another. We are remembering that we are all in this together.

Thanks, Madison, for a great 7 years! The Underground Butcher will close up shop on December 15th, 2019. But don't worry! You can still buy your @undergroundmeats (dry cured salami) from many other local businesses, including @theheightskitchen , @willystreetcoop (all three locations), @fromagination , @metcalfesmarket , and many others.
It has been a joy to be a part of the Marquette neighborhood over the past 7 years. Huge thanks to the amazing staff at Underground Butcher, they have been the heart of the shop and so wonderful to work with. We want to especially recognize Michael Signorelli, Dietrich Gosser, Joslyn Mink, Sophia Phillips, and Steve Dawson -- thanks for everything through the years! by @jonnydhunter
