Joyeta at Joyau feels like it was meant to be. And so we are simply thrilled to have her in the kitchen for a week from 23rd-26th July! Growing up in Hong Kong, Joyeta Ng has always had a sixth sense for good food. She trained as a chef in Japan and honed her craft during a seven-year stint at Tokyo’s two-Michelin-starred Den, followed by working at the Chairman in Hong Kong and Noma’s groundbreaking Kyoto pop-ups in 2023 and 2024. While most of her experience as a chef is in fine-dining restaurants, Joyeta’s style of cooking is, in her own words, “how a Chinese mother would cook for her nearest and dearest”…She will be channelling this care and the depth of her experience into three menus, covering breakfast, lunch and dinner. Last Thursday, we welcomed Chef Zaiyu Hasegawa of Den, Tokyo, for the second dinner in our 20th Anniversary Guest Chef Series. The kitchen was alive with energy as he and Chef Michael cooked side by side—an unforgettable collaboration and a celebration of craft, culture, and connection. A recap in pictures from our most recent guest chef dinner with Joyeta Ng. Over two sittings in one night we had the pleasure of stuffing our faces with Joyetas impressive and thoughtful cooking. Plates came in CLEAN and we are delighted that everyone seemed to really enjoy this menu including the century eggs which can be unfairly treated when people are faced with the unfamiliar. Really really nice and cozy place with used stylish baby clothes form owner’s kids as decorations at @myneighboursthedumplings ,cute dogs, tasty and satisfying food from @joyetabelly 😋❤️🥰 Heaven! My grandma and I made over 243,000 dumplings together back in the day( she did the most work obviously and I started around 5 years old ) so I’m a huge fan! Looking forward to coming back to try the dumplings soon! by @joyetabelly

Introducing our second guest chef of the year - Joyeta Ng @joyetabelly ! She will be cooking up a menu with Cantonese flavours and giving it her own spin with influences from her own background which not only includes her Cantonese heritage but she was also trained to become a chef in Japan. Recently she has been working at Noma Kyoto and she’s heading back there again in march for another stint. We are delighted to have her with us whilst she is in the UK and we are looking forward to share this experience with you!There will also be a tea pairing with the menu, but more on that later. In her own words, “imagine how a Chinese mother would cook for her nearest and dearest”…Born in the culinary melting pot that is Hong Kong, Joyeta was raised with a sixth sense for good food. Classically trained in Japan, she honed her craft during a seven-year stint at Tokyo’s two-Michelin-starred DEN before joining the likes of Kitchen Table** (London) The Chairman* (Hong Kong), and most recently René Redzepi’s Kyoto spinoff.Earlier this year, her inventive dishes like ‘grilled Mangalitza char siu pork’ and ‘scallop, vermicelli and salted lemon’ and ‘bread with lardo, scallion, and toasted sesame’ broke records at her Sunday pop-up in the Wine Bar. Who knew so many people craved exceptional Chinese cooking?Now back for a whole week, which also happens to straddle Lunar Year, Joyeta is serving a heartfelt menu packed with comforting, home-style dishes elevated with her signature flair.
