Tonight’s musical dessert tasting menu at @nmopgram. This was easily one of the craziest but also most rewarding food things I’ve ever done. 80 trays of 12 desserts paired with 12 musical miniatures by @acwcomposer. …

1. Yuzu-charcoal gummy “vinyl record” w/ toothpick needle

2. Orange mousse w/ crispy quinoa and dark chocolate

3. Saffron meringue

4. Whipped mascarpone w/ citrus caramel, candied lemon, basil chiffonade

5. Peeled grape tanghulu “eyeball” w/ black sesame “pupil”

6. Scotch whisky ice cream w/ smoked pumpkin “katsuobushi” and black sea salt

7. Persian sohan honey brittle

8. Lavender lemon zest ice cream w/ strawberry “grandma candy” crumble

9. Dirt pie w/ dried apricot

10. Matcha chia pudding w/ sesame and toasted coconut

11. Cardamom-rose sugar glass w/ spiced pomegranate-raspberry gelée
