Our rye yakisoba noodles. Custom recipe made for us by Omar at @komuginoodles The flour blend is 100% local grain — 80% bread flour and 20% stoneground light rye. The noodles have high hydration and moderate kansui, with a higher sodium-to-potassium ratio to prevent them from becoming too firm. Tori karaage kare don Juicy n crispy double fried chicken, our sweet and aromatic Japanese curry, fluffy Japanese rice, pickled cabbage, pickled ginger. The sweetness from our curry comes from using apples, pears and carrots. Curry roux is made with ghee and a blend of Japanese and Indian spices. Chicken is proper free range, they get to roam and eat natural feed and 10 different type of herbs. They truly are raised with care and to the highest welfare standards. NEW Japanese pop up in Old Market 📍@kinjonokitchin at @oldcastlegreen ad | invite Chef Tony is dishing out some outstanding dishes from a unit at the back of Old Castle Green pub! Expect dishes like crispy chicken karaage, yummy fried oyster and shimeji mushrooms and loaded okonomiyaki fries. Plus mains including donburi / rice bowls such poached chicken chasu don with ginger and spring onion sauce, Japanese curry and mapo tofu. & noodles dishes using the same noodles from the same guy that makes the noodles for all the best ramen restaurants and pop ups in the city @komuginoodles Keep an eye out for the Scotch Egg special which has already got people talking 👀 Everything is made from scratch from Tony - from the Japanese curry made with apples, pears, carrots and Japanese seasoning & curry powder, to the black sesame mayo and spicy and umami sauces that coat the noodles. & you can taste the quality & care he puts into everything. He also uses the highest quality meat including rare breed pork and herb fed free range chicken (which are both delicious)! 🌱 & there are veggie / vegan alternatives for everything we had including the mapo tofu, yakisoba noodles and Japanese curry. Our kuro tantan mazesoba. Wide and thick chewy noodles made for us by @komuginoodles, tangy and umami black sesame forward sauce, mild in-house made chilli oil, Chinese spiced British rare breed pork mince @alternativemeats , onsen egg, pak choi, crispy onions and negi. Also available for veggies and vegans. We hand massage(temomi) the noodles each order, the wavy noodles does bits catching all the toppings and brings it all together 😁 Make sure to mix well before consuming 🥢 All our dishes will be served in biodegradable containers ✌️ @oldcastlegreenbristol by @kinjonokitchin
