Thom Kha Gai (Thai Coconut Soup) 🍲😮‍💨✨
Seriously one of the best soups I’ve ever had. It’s perfectly creamy, tangy, sweet, and spicy!

Ingredients:
- Shallots (or onions)
- Garlic
- Ginger
- Chicken
- Salt
- Lemon Pepper
- Paprika
- Lemongrass (or paste, they didn’t have actual lemon grass at the store ☹️)
- Chicken broth
- Coconut Milk (2 cans)
- Fish sauce
- Palm sugar (sub: brown sugar, coconut sugar, maple syrup)
- Lime (lots of it 😝)
- Veggies: Mushrooms, bean sprouts, bamboo shoots
- Garnish options: Cilantro, Hot chili oil, sesame seeds, more lime

Thom Kha Gai (Thai Coconut Soup) 🍜🌱

One of my favorite things ever is to cook with friends! This is easily one of my top favorite soups I’ve ever made. It’s perfectly creamy, tangy, spicy. It’s simply delicious. We all had seconds 🤭 I’m making it again this week!!
