Spring is Upon Us 🌷🍃 and this bunny was craving some Creamy Carrot Soup ✨🐇🥕

I whipped up this velvety, cozy bowl of goodness! Perfectly smooth and packed with fresh flavors- just what I needed! It’s gut-friendly, plant-based, and gluten-free. The perfect way to welcome the season. ☺️

Ingredients:
- small onion, sliced
- 2 cloves of garlic, smashed
- 2 tbsp of butter
- ginger
- bag of carrots (chopped; do not peel, the skin contains a lot of essential nutrients)
- tumeric
- paprika
- coriander
- lemon pepper
- red pepper flakes
- sun dried tomatoes + oil
- sea salt
- can of diced tomatoes
- Add veggie/chicken broth and bring to a boil. Then reduce heat and let simmer for 25-35 min, or until carrots are tender
- Remove from heat and blend until smooth, then return to heat to warm it up again
- add coconut milk, miso paste (optional) and lemon

- Garnish options: cilantro/ parsley, nutritional yeast for cheesy flavor, sesame seeds. I paired it with blue corn tortilla chips :pp
