Optimistic that one day, this will happen for me ✨ by @kitchening_withrc

Cook once, eat twice! Cook enough food now for two nights. Eat half for dinner tonight and individually freeze the rest for a night when you want a homemade dinner but don’t have time to cook 🫶

Anyone else feeling like takeout and no dishes tonight? 🤣 by @kitchening_withrc

It is amazing how much a bag of frozen meatballs and a jar of sauce can reduce dinner anxiety🫶
.
.
Teriyaki Meatballs
1 bottle of teriyaki sauce (about 8oz)
1 can of pineapple
1 bag of frozen homestyle meatballs
Start by pouring the teriyaki sauce into the pan. Then open the can of pineapple, but before you drain it pour 1-2TBSP of pineapple juice into the teriyaki sauce and stir. Then add the frozen meatballs and cover. Cook according to the directions on the meatball package. 3-5 minutes before the meatballs are done cooking, add the pineapple. Serve with quinoa or pasta.
.
.
Italian Meatballs
1 jar of tomato basil sauce (about 8-16oz)
1 bag of frozen Italian meatballs
Follow the same steps above. Switch the teriyaki sauce for tomato sauce. Omit the pineapple juice & pineapple. Optional:add fresh basil. Serve over pasta (might want an additional jar of sauce depending on how sauce-y you like your pasta)
.
.
Vodka Sauce Meatballs
1 jar of vodka sauce
1 bag of frozen meatballs
Same as above. Switch the red sauce for vodka sauce. Serve over pasta.

If you want flavorful meat, don’t wait to season it! Season the meat before it hits the heat so every bite has flavor (not just the outside) 🫶

Sometimes dinner is pasta dumped into a bowl.
Sometimes it’s leftovers thrown onto a plate.
Sometimes it’s chicken, frozen veggies, and whatever carb you can find.
Sometimes it’s a snack plate because that’s all you’ve got in you that night.

And you know what?

That’s still dinner. 🫶

Feeling overwhelmed doesn’t mean you’re failing, it means you’re carrying a lot. You’re a MOM, of course you’re overwhelmed sometimes!

On the nights you’re feeling overwhelmed, remember to give yourself permission to make dinner simpler.

Permission to repeat meals, Permission to take shortcuts, Permission to make mac and cheese AND be proud of how delicious it is!

Save this for the next time dinner doesn’t go according to plan. This is your reminder that you (& your mac and cheese) are amazing 🫶
