Tiramisu au pandan

Pour un petit tiramisu (2-3 personnes)

250 g de mascarpone
2 œufs entiers
2cas d’extrait de pandan*
40 g de sucre
150 ml d’extrait de pandan + 30ml de liqueur de pandan
Quinzaine de biscuits cuiller ou savoiardi

*Pour faire une extraction naturelle des feuilles de pandan :
Une dizaine de feuilles pour 100-150ml d’extrait.
Laver les feuilles puis les couper en tronçons.
Dans un mixeur, ajouter les feuilles et l’eau et mixer pendant une bonne minute. Filtrer et la conserver en bouteille 2-3 jours au frigo ou en faire des cubes au congélateur !

Recette du tiramisu :
- Séparer les jaunes d’œufs des blancs et monter les blancs en neige avec la moitié du sucre
- Blanchir les jaunes avec le reste de sucre et ajouter 2cas d’extrait de pandan.
- Ajouter la mascarpone et bien mélanger (mais ne pas trop fouetter !).
- Incorporer délicatement les blancs en neige.
- Dans un récipient, mettre 200ml d’extrait de pandan et la liqueur
- Imbiber les biscuits cuiller ou savoiardi et déposer dans un moule 23x15cm une première couche. Étaler la moitié de la crème mascarpone puis faire une deuxième couche de biscuits. Finir avec la couche de crème et laisser reposer minimum 3h au frigo
- Torréfier à la poêle 2 cas de noix de coco rapée et saupoudrer sur le dessus.

In the Club, we all fam! What an incredible afternoon last Wednesday at Tales of the Cocktail!

CLUB PANDAN transformed the Ritz-Carlton’s Carrollton Room into a glowing green world of Kota cocktails, music, and pandan-fueled energy. Maison Ferrand USA and Kota Pandan liqueur partnered to deliver our most radical transformation of a Tasting Room to date, and we are thrilled to share that we welcomed 560 guests through the doors.

Many thanks to our incredible guest talent, Nico de Soto and Raphaëlle Rosenthal of Danico Paris, for bringing such enthusiasm and creativity to the event—and to everyone who helped us turn an afternoon Tasting Room into a true escape.

Two nominations. One incredible feeling.

This year, I’m honored to see both of my worlds represented at the 2026 Tales Spirited Awards.

🌿 Kota Pandan Liqueur has been nominated for Best New Spirit or Cocktail Ingredient, alongside some of the most exciting products released this year.

🍸 Danico has been nominated for World’s Best Cocktail Menu, among a pretty cool lineup of bars.

What makes these nominations special is that neither happened overnight.

Kota is the result of years spent traveling through Southeast Asia, discovering pandan, and wondering why one of the world’s most incredible flavors wasn’t more widely represented behind the bar.

Danico’s nomination represents the work of an extraordinary team that continues to push creativity, hospitality, and storytelling forward every day.
