Liguria, The Cookbook is one year old today! 🥳 What a ride it has been! Thank you to all the wonderful people who helped bring this book to life, to @rizzolibooks for believing in me, to my fearless editor @clo_nyc, and to all the fabulous readers and cooks who have bought it, read it, and made the recipes! I’m celebrating with a gallery of some of my favorite fall recipes from the book: Barbagiuai (Fried Pumpkin Ravioli), Ravioli con Tócco, Fried Sage Leaves, and Olive Oil shortbread with Hazelnuts). Il Ponente is the western side of Liguria, stretching from Genoa to the French border, and every time I go, I come home even more in love with it. It has medieval towns, baroque churches, some of the finest olive oil in the country, remarkable wines that rarely leave the region, and considerably fewer crowds than the east. I wrote up everything I learned on Laurel’s Kitchen, including where to go, what to eat, and what to drink while you’re there.

These fried pumpkin ravioli hail from the border where the Italian and French rivieras meet. Called barbagiuai on one side, barbajuan on the other, the exact filling varies from town to town. The dough is pasta matta, ‘crazy pasta,’ which is also a fair description of my September.

Four hundred years apart, two people spent their lives building impossibile things in the Italian countryside. One carved monsters into bedrock while the other built worlds out of mirrors and mosaics. Today on Laurel’s Kitchen I explore two remarkable gardens and the obsession, folly and whimsy it took to build them.
