We had the honor of welcoming Fabiana M Carvalho from @thecoffeesensorium to @belco.coffee for a masterclass on multisensory flavor perception in coffee.

The first two days were dedicated to our clients and our training leads, @lamialcoffee and @izadelgado . But because sharing and internal training are part of Belco’s DNA, a large part of our team also had the chance to join a workshop : deep dive into taste perception — with a special focus on flavor and the cognitive mechanisms behind tasting.

Because taste is influenced by so much more than the coffee itself:

•Verbal information
•Packaging design
•Type of cup
•Sound and visual environment

We explored the 5 basic tastes and how we perceive them, and asked:

🔬 Why do we taste things differently?
1. Genetics
2. Environment
3. Age, emotions, hormones

👃 Flavor ≠ Taste: the essential role of smell
🍯 Why do some coffees taste sweet even without sugar?
👅 Not everyone experiences taste the same way

We ended the workshop with a tasting exercise using 5 base solutions: sweet, salty, sour, bitter, and umami.

Each participant reflected on:
– The intensity of each taste
– Its location on the tongue
– The duration of the aftertaste

An eye-opening way to explore our own sensory sensitivity, and how it differs from one person to another.

Thank you @lamialcoffee and @the_traveling_barista for organizing this.
