Colombia new crop: two harvests, one origin

We recently sat down with Angel, Head of Belco Colombia, to talk about the new crop.

With its diverse geography and climate, Colombia has two coffee harvests throughout the year: a main harvest in the central and southern regions, and a smaller harvest, known as Mitaca or Traviesa, further north.

🎥 Angel tells us more about how the Colombian coffee harvest works.

New workshop on the making.
Cacao-based drinks — coming soon.

In the meantime, we keep testing at Nahù. ☕🍫

Before summer slips away — try this at home or at the office. A different kind of afternoon pause. A different kind of wake-up call.

Cold cacao. No fuss, just flavour.

Q Grader ! 🥄🥄🥄

One intense week dedicated to sensory calibration, perception, alignement, mental focus, and endurance.
More than passing a series of demanding tests, it’s about developing a shared language for quality, moving from « me » to « we ».

Nothing is taken for granted, but the passion remains the same — now with a greater sense of responsibility.

Super proud to have achieved this milestone together with @loosm @terresdecafe

Many thanks to the Q instructor @lamialcoffee his team, and @belco.coffee for organizing everything.

We had the honor of welcoming Fabiana M Carvalho from @thecoffeesensorium to @belco.coffee for a masterclass on multisensory flavor perception in coffee.

The first two days were dedicated to our clients and our training leads, @lamialcoffee and @izadelgado . But because sharing and internal training are part of Belco’s DNA, a large part of our team also had the chance to join a workshop : deep dive into taste perception — with a special focus on flavor and the cognitive mechanisms behind tasting.

Because taste is influenced by so much more than the coffee itself:

•Verbal information
•Packaging design
•Type of cup
•Sound and visual environment

We explored the 5 basic tastes and how we perceive them, and asked:

🔬 Why do we taste things differently?
1. Genetics
2. Environment
3. Age, emotions, hormones

👃 Flavor ≠ Taste: the essential role of smell
🍯 Why do some coffees taste sweet even without sugar?
👅 Not everyone experiences taste the same way

We ended the workshop with a tasting exercise using 5 base solutions: sweet, salty, sour, bitter, and umami.

Each participant reflected on:
– The intensity of each taste
– Its location on the tongue
– The duration of the aftertaste

An eye-opening way to explore our own sensory sensitivity, and how it differs from one person to another.

Thank you @lamialcoffee and @the_traveling_barista for organizing this.
