Sharing my sister Janie’s recipe for enchiladas verdes or suizas. It’s an easy recipe takes about 10 minutes. You can also use a rotisserie chicken and shred it for a meal in under 30 minutes. Shedded Monterey Jack, quesillo cheese or any melting cheese you have works for these enchiladas.Tip if you have extra Chiles or tomatillos you can freeze them, they last a few months in the freezer. #mexicanfood #enchiladas #easydinnerideas taken in San Jose, California by @lettyloboscooks

No riches can replace the memories we made together as a family at the dinner table, from my grandmother Francisca’s ranch in Zacatecas to my Grandmother Chelos where you would always find her red hot salsa sitting at the table. To my parents home where both our parents cooked and the fire place was always lit. These are my memories that I hold forever in my heart all my grandparents are now gone but never forgotten.#mexicanfood #mexicana #comidacasera #recetas #familydinner taken in San Jose, California by @lettyloboscooks

My grandmothers Consuelo and Francisca made their own cheese through the years, my grama Chelo was resourceful if she had extra milk she was not going to let go bad she was making something with it. My grandmother Francisca used her milk from her cows to make cheese, she kept behind a screened off little cabinet. Now that I am older I realize now how much these 2 Matriarchs of our family shaped my life, woman who were strong life was not easy for either of them.Still they made the best with what they had, left me an example that will stay with me for a lifetime.
