🌱9g fiber per serving. Serves 2.

-1 cup frozen peas
-1 cup frozen shelled edamame
-2 tbsp Greek yogurt
-1 tbsp tahini
-generous pinch of salt
-juice and zest of 1 lemon
-drizzle of olive oil
-1 tsp chili oil
-optional: parmesan and fresh parsley for topping

1. Pour boiling water over the frozen peas and edamame to defrost and let sit for 1 minute.
2. Meanwhile, mix the Greek yogurt and tahini with a generous pinch of salt. Taste, adjust seasoning, and set aside.
3. Drain the peas and edamame, then season with salt, lemon juice and zest, olive oil, and chili oil.
4. Spread the tahini yogurt onto a plate and top with the peas and edamame.
5. Sprinkle with parmesan and parsley, if using.

🍲The colder months are the perfect time to lean into warmm foods that bring both fiber + plant diversity! Soups, stews, and roasted veggies are the foods we want to bring out during these times when it might not be the easiest or tastiest time to have all of the fresh produce. I had a super comforting lentil soup this day, it was the perfect choice for a cooler day and delivered some awesome fiber and plant diversity! by @loamscience

🌱60g fiber per batch

🫙Chia jam:
 
 -1⅓ cups frozen berries
 -pinch of ginger
 -1 tsp honey
 -1 tbsp chia seeds
 -splash of water
 
 🍪Cookies:
 
 -2 tbsp ground flaxseed
 -5 tbsp water
 -3 tbsp honey or maple syrup
 -1 tbsp oil
 -2 tbsp peanut butter
 -1 tsp cinnamon
 -generous pinch of salt
 -2 sachets LOAM
 -1 cup ground almonds
 -1 cup oats
 
In a pan, combine the frozen berries, ginger, honey, and a splash of water. 
 
Cook until soft, then mash together with the chia seeds and set aside.
 
While the berries are cooking, combine the ground flaxseed with the water and set aside.
 
In a large bowl, combine the peanut butter, honey or maple syrup, and oil. Add the soaked flax and stir to combine.
 
Add the cinnamon, salt, LOAM, ground almonds, and oats. Mix until you have a thick dough.
 
Divide into 12 balls. With slightly wet fingers, make a well in the center of each cookie and spoon in the chia jam.
 
Bake at 350°F for 10 minutes, until just golden. Let cool to firm up.
 
Makes 12 cookies.
