There’s a lot that happens before the first plate ever reaches the table.

For Chef Graeme Cheevers, LOMA is about the complete experience — the food, of course, but also the room, the service, the atmosphere and the countless details that quietly shape a guest’s visit.

From the kitchen to the dining room, his approach is the same: considered, precise and always evolving.

LOMA is an expression of that philosophy. Refined without being rigid. Ambitious without losing warmth. A restaurant built around exceptional produce, thoughtful cooking and genuine hospitality.

And whether he’s developing a dish, talking with the team or straightening a table before service, Graeme remains very much part of the detail.

Before the first guest arrives, the rhythm begins…🔪

Morning light, sharp knives, quiet focus — every element meticulously prepared, every garnish placed with intent. This is where the experience truly starts.

Mise en place isn’t just preparation; it’s precision, discipline and respect for the ingredients.

Its not very often you dine out and walk away thinking that the entire experience was perfect, however at @lomabygc myself and my wife very much had this experience.

From our arrival to the final petite fours arriving this restaurant was up there with some of the best in the world not just Scotland.
