Globe Margarita 🌍

Assigned fennel as my challenge ingredient, I used it as a starting point to explore identity, territory and transformation through fermentation.

Every ingredient carries the identity of a place. Cointreau brings French heritage and craftsmanship, connecting distant origins through citrus and structure. Espadín mezcal and Tajín fermented fennel reflect Mexico’s depth and transformation, while wild fennel seeds foraged in Murgia, Puglia express territory in its purest form. A homemade fennel liqueur built on Cointreau becomes the final transformation, turning one ingredient into something new.

The steel sphere represents the Earth’s core, the engraved glass its meridians and the liquid its atmosphere. Fermentation reflects transformation, while every ingredient finds its place on the globe.

From Amsterdam to Paris, with a little stop around the globe. 🌍🍊

Meet Globe Margarita, Luca’s winning creation for the Dutch 🇳🇱 edition of the @cointreau #margaritachallenge2026
Built around fennel, the cocktail connects different territories in one glass: Cointreau from France, mezcal and Tajín inspired fermentation from Mexico, and wild fennel seeds from Murgia, Puglia.

After being selected as the Dutch winner, Luca will be heading to France to represent the Netherlands at the international semifinal.

Before Globe Margarita makes its way to Paris, you can taste it here at Rosalia’s Menagerie for the next few weeks.

🇹🇹🦜 SECOND FLIGHT 🦜🇳🇱

A new bottle. A second life.

Born in Trinidad & Tobago, Angostura is entering a new chapter with its redesigned premium rum range — lighter bottles, sustainably sourced materials, and the same heritage inside. ♻️

But the idea of giving something a second life is already part of the story of Angostura Grand Reserve 1919. Its origins trace back to rum discovered in charred barrels after a fire at Trinidad’s Government Rum Bond — something almost lost, rescued and transformed into a new legacy.

That story of rescue, transformation and rebirth became the starting point for Second Flight.

Inspired by the craftsmanship and legacy of Master Distiller John Georges, our Old Fashioned twist combines Angostura Grand Reserve 1919, Tamboo infused with spent coffee grounds, and rescued red wine transformed into syrup. 🥃☕️🍷

But at Rosalia’s Menagerie, the story doesn’t end in the glass.

Angostura bottle caps found a second life as our coaster, while the rescued wine took one final form: a little parrot candy. 🦜

A tropical creature carrying a piece of Trinidad & Tobago 🇹🇹 to Amsterdam 🇳🇱, finding a new home among the creatures of Rosalia’s Menagerie.

It’s been a mystical experience ✨, somewhere between antiquity and innovation 🛕🏯⛩️. I would have never expected anything like this!
@hans.ngo.wurfbain took me to wonderful places 🌏, often hidden and hard to access .
He fed me like a turkey on Thanksgiving 🦃 with an extra kick of Sichuan spice 🌶️🔥🥟🍜

On February 8，we will host a special event at Zouma Craft Beer Bar, Luzhou, featuring a showcase of Baijiu international cultural tourism promotion and the achievements of the PANDA Baijiu Cocktail Game (PCG) from the Netherlands.

The event takes place in Luzhou, Sichuan — the birthplace of strong-aroma Baijiu and a city deeply connected to the journey of Hans Ngo Wurfbain, founder of PANDA, where he studied and inherited traditional Baijiu craftsmanship.

Hans believes that the current state of Baijiu is the result of centuries of historical refinement. Rather than being isolated or misunderstood, Baijiu should step confidently onto the global stage — not as an outsider, but as a dancer at the world’s spirits ball, engaging in dialogue with other great spirits traditions.

Three bartenders will present Baijiu cocktail creations at the event:

- Hans Ngo Wurfbain — Advanced Bartender certified by Bols Cocktail Academy, China National Level-1 Baijiu Taster, 22nd-generation inheritor of Luzhou strong-aroma Baijiu craftsmanship (Chen lineage, Qingming school), founder of PANDA & PANDA Cocktail Game.

- Luca Acquaviva — Head Bartender of @rosalias_menagerie （Amsterdam), Champion of the 1st PCG, Johnnie Walker Sour Takeover, and Chingón Excomulgado cocktail competitions.

- Sa Wang — PANDA China Representative, former Head Bartender of Flair Bar at The Ritz-Carlton, Chengdu.

This event aims to bridge Eastern and Western spirits cultures, encourage innovation, and explore new, contemporary Baijiu drinking experiences through the universal language of cocktails.

60 ml olive oil mango mascarpone cream 🥭
10 ml @elixirdanvers 🌿
20 ml fresh lemon juice 🍋
Freshly ground peppercorn mix 🌶️

My entry for the #ElDoradoRumHeritage2026 🥃🌿

Built around El Dorado 12 Year Old, a Demerara rum shaped by Guyana’s rivers, rainforest and the historic wooden stills preserved by Demerara Distillers. Tucano starts from the idea of a menagerie as a collection formed through movement, encounters and coexistence, and follows an imagined journey along Dutch 🇳🇱 Golden Age trade routes connecting Europe and Guyana 🛶

Mango and mascarpone bring soft tropical richness, while extra virgin olive 🫒 oil from Andria 🇮🇹 adds quiet structure and texture, echoing how wood shapes rum over time. Fresh lemon juice keeps the path clear 🍋

Finished tableside with freshly cracked peppercorns from different origins, ground with a wooden toucan pepper mill 🌶️🦜 A final gesture reflecting Guyana’s layered history of exchange.

A cocktail about listening to the spirit rather than rewriting it ✨
