“Information alone does not create skill; practice bridges the gap between theory and execution.”

So proud of all the work, practice, and dedication we’ve put into our pastry case every week and even more proud to see how beautifully it all comes together. ☺️❤️

Every pastry represents someone’s effort, creativity, and contribution. Seeing everyone’s hard work come together and watching the end result look this wonderful is truly something to be proud of.

So proud of what we’re building here and of every single person who contributes to making it happen. ❤️🥐✨

Still pinching myself that I get to do this for a living❤️☺️ by @luciamerinoc

Fun fact:

Sticky Honey Pecan Monkey Bread 😋
😁Pequeños cambios, mucha intención y algo delicioso al final. That’s the kind of waste reduction we’re here for.♻️💚 by @luciamerinoc

This summer was full of wonderful events and celebrations, and I feel very lucky to have been part of some of them. I love collaborating with chefs on projects I respect.
Two of my favorite events that I was able to participate this summer:
La Estación @laestacionpr was celebrating its 20th anniversary, and Sur @surbarranikkei its 7th. Two very special occasions, each with their own story and their own way of bringing people together.
Both menus were a pleasure to experience. So much thought and work went into every dish. Chefs Kevin and Francis at La Estación @laestacionpr , and Chefs Rafael and María at Sur @surbarranikkei , spent hours developing their menus, and I’m simply happy that my dessert could be part of the experience and sit alongside their food.
It’s always special to see what happens behind the scenes: the teamwork, the long hours, the pressure, the adrenaline, and everyone coming together with the same goal.
There is a lot of work that goes into these moments, a big group of people getting it done, but when everything is finally finished and you see it all come together, there’s an indescribable feeling of satisfaction.
I’m very grateful to have shared these celebrations with such wonderful teams and to have played a small part in these milestones.
Here’s to many more years of La Estación @laestacionpr and Sur Barra Nikkei @surbarranikkei . 🤍✨ by @luciamerinoc

Toasted Rice Ice Cream 😋🍚🍦

Toasted rice ice cream was one of the first ice cream recipes I developed when I was working in Dallas as a pastry chef.
I ended up in Dallas because one of my favorite chefs ever, Chef Richard Gras, was moving there to run one of the best fine dinning restaurant. I had previously worked with him in Miami, and he needed a pastry chef, so he offered me the job.
It was such a fun chapter in my career. I really enjoyed my time there, and especially loved working with Chef @rgras . He was a incredibly creative and gave me complete freedom with the pastry menu. At the same time, he was always pushing me to try new things and never allowed me to get too comfortable. That really helped me learn to think outside the box and trust my creativity.
He is a great teacher, leader and mentor, and his influence has stayed with me to this day. I still carry his sense of leadership, creativity and curiosity with me in the way I approach food.

Shout out to @vianda_pr and their pastry chef Sofia for again letting me borrow their ice cream machine so I could make this for the anniversary dinner of @surbarranikkei 😁 by @luciamerinoc
