Toasted Rice Ice Cream 😋🍚🍦
Toasted rice ice cream was one of the first ice cream recipes I developed when I was working in Dallas as a pastry chef.
I ended up in Dallas because one of my favorite chefs ever, Chef Richard Gras, was moving there to run one of the best fine dinning restaurant. I had previously worked with him in Miami, and he needed a pastry chef, so he offered me the job.
It was such a fun chapter in my career. I really enjoyed my time there, and especially loved working with Chef @rgras . He was a incredibly creative and gave me complete freedom with the pastry menu. At the same time, he was always pushing me to try new things and never allowed me to get too comfortable. That really helped me learn to think outside the box and trust my creativity.
He is a great teacher, leader and mentor, and his influence has stayed with me to this day. I still carry his sense of leadership, creativity and curiosity with me in the way I approach food.
Shout out to @vianda_pr and their pastry chef Sofia for again letting me borrow their ice cream machine so I could make this for the anniversary dinner of @surbarranikkei 😁

@luciamerinoc you were and still are one of the most talented pastry chefs I have worked with. No matter what I through at you, your creativity was unending, your technique was flawless, and I couldn’t be more proud of what you have accomplished in your career. Some of the best times of my career.
