Luís Andrade chegou à cozinha sem escola, sem um plano para ser chef e depois de uma passagem pela construção civil em França.

Antes disso, havia o Bairro do Zambujal, o hip-hop, o graffiti e uma vontade muito concreta de construir o próprio caminho.
Hoje, está à frente do @chevaldorparis , um dos restaurantes mais cobiçados de Paris, é coproprietário de outros projetos como o restaurante taxiphoneparis , prepara novos negócios em França e em Cabo Verde e assumiu recentemente a direção criativa da marca portuguesa @isto.pt , com uma coleção inspirada precisamente no bairro onde cresceu.
Pelo caminho, construiu uma cozinha onde Cabo Verde está presente sem precisar de ser transformado em rótulo.

À mesa com a BANTUMEN, falou de identidade, imigração, gastronomia africana, liderança, vinho natural, jiu-jitsu e da passagem de cozinheiro a empresário.

Pour le premier épisode de notre nouvelle série Day Off, on a suivi Luis Andrade, chef du Cheval d’Or à Paris (ex-Clown Bar et Fripon), pour découvrir son quotidien hors cuisine. Direction le tatami pour une session de jiu-jitsu, discipline qui rythme ses jours off autant que la cuisine structure ses services. Entre combat, rigueur et lâcher-prise, le chef nous montre comment cet art martial influence aussi sa manière d’être aux fourneaux.

We are happy to finally announce that we have taken over @chevaldorparis

We have a new reimagined menu inspired by dishes that might have been served here in 1987 upon opening as a Chinese restaurant, infused with some of our favourite French classics.

Reservations are now open and we can't wait to welcome you to our new home
