CHICKEN PANANG CURRY

ad Now we’re talking! @ocadouk has just launched its biggest ever range of Thai products, so we can make our real deal favourites from scratch. It had to be Panang curry first🥘🤝🍚

INGREDIENTS (Serves 2-3):
- 1 tsp Coconut Oil
- 2 tbsp Panang Curry Paste
- 1 tbsp Roasted Peanuts, ground to powder
- 2 Garlic Cloves, finely grated
- 1-inch Piece Fresh Galangal, peeled & grated (sub ginger)
- Fresh Coriander, stalks chopped
- 4 Chicken Thighs (Boneless & skinless), cut into strips
- 300ml Coconut Milk
- 100g Extra Fine Green Beans
- 3 Lime Leaves, torn (stems removed)
- 1 tbsp Fish Sauce
- 1.5 tbsp Palm Sugar (sub Dark Brown Sugar)
- Handful Fresh Basil Leaves
- 1 Red Chilli, thinly sliced
- Half Makrut Lime, zested
- 100g Jasmine Rice

METHOD:
- Heat a wok over a medium heat and add coconut oil for a few minutes until it melts.
- Add the Panang curry paste, ground peanuts, garlic, galangal and coriander stalks into the oil. Stir continuously for 2 minutes until fragrant.
- Add the chicken into the paste. Stir to coat for a few minutes until opaque on the outside.
- Pour in the coconut milk and bring to a gentle boil.
- Add the green beans, lime leaves, fish sauce, and sugar.
- Reduce the heat and simmer for 5 minutes until the green beans are tender-crisp and the sauce thickens slightly.
- Remove from the heat and stir in basil leaves, red chilli and lime zest. Taste and adjust seasoning accordingly.
- Serve over fluffy Jasmine rice and garnish.
