There is not one curry amongst our postings for Thailand, that just had to be changed! Winter is coming and we need comfort food! 🍲

I popped into my favourite shop in Scunny which stocks absolutely every item you could possibly need for Asian cooking: @tradewinds_shop, and as always - found something exciting: @maeploy_kitchen yellow curry paste to make life easier and stunning Thai Red Jasmine Rice! The curry paste is authentic and so tasty and the rice adds the most beautiful nutty flavour.

The first time we tried Thai Yellow Curry was on a trip to Thailand about 25 years ago. This version usually has potatoes but I went with just one carb with the wonderful red rice and instead we have homegrown carrots, onions and tomatoes - all fresh from the garden.

Simple, comforting, and absolutely delicious.
