The biryani culture of Mangalore has a wide spectrum of variety with different spices and cooking techniques influenced by the various local communities.

Kizhi biryani, a dish that I’d like to go back to Mangalore for. The biryani has a spice blend like no other. Using short grain aromatic rice, the masala use more aromatised garam masala than spice. Steamed with a wrapping of multiple layers of banana leaf gives a distinct flavour to the dish.

A bowl of gassi and chicken al fam fry made the content biryani a complete meal.

Using a dry bamboo to steam the biryani was an interesting ‘dum’ effect to a biryani.

Our Tullu Nadu Breakfast trail across Mangalore began with an unusual 3 layered filter coffee known as KT or ‘Kalladka’ coffee.
Dishes savoured on the breakfast trail were:-
- Tupu dosa
- Open bene masala dosa
- Mangalore buns
- Sajjige roti. A great way to take care of left over upma
- Sevigge rasayyana. A breakfast cereal bowl idea
- Chikoo seera. The burst of flavours and different textures was personal favourite

As Mᴀʜᴇ́ Jᴏᴜʀɴᴇʏs continued its exploration of the culturally rich - Mangalore city, our first meal had to be at possibly its most revered dining destination - Hotel Narayana. A hole in the wall restaurant, serving only fish thali, procuring their seafood fresh for each meal period, Hotel Narayan is an institution in itself.

A must have on thier menu is the Anjal (Surmai) fish thali. Our banana leaf thali consisted of parboiled rice, sardine gassi, bottlegourd and lentil curry, homemade lemon pickle and the surmai fish fry fried in coconut oil and topped with the crunchy fried bits of the fish marinade.

A major industrial port city, Mangaluru is on the west coast of India, located between the Arabian Sea and the Western Ghats and 14 km north of Karnataka–Kerala border. Mangalore is the state's only city to have all four modes of transport—air, road, rail and sea, making its culinary culture very unique.

Our culinary journey in Mangaluru takes us through the cuisines of the various communities of the region, discussions with celebrated chefs, while exploring breakfast classics from the Tullu Nadu region, scrumptious fish thalis, the city's aromatic Biryani culture influenced by the Mangalorean Muslim community, understanding variations of gassi and savoring the freshest of seafood.
