POSTS STORIES REELS

A little while ago, I had developed a recipe for French canele, a perfect vessel for good whole grain flours. After many rounds of testing, just as I finished testing, the company whose silicone molds I used for consistency changed their pan. The new molds were not only smaller but also the color of the pan changed from black to silver, all of which affects everything I tested for.

I just finished re-testing my caneles in the new pan and I am thrilled with the outcome. Most important, caneles are super easy unlike what you might think — no fancy copper molds and wax coating needed.

I‘m beyond excited to announce my next book, Baking with Ancient Grains—Mediterranean-Inspired Recipes for Living Well, a dream come true. Pre-orders are now open—link in my bio above. Please share—this makes a real difference to a book’s life. Thank you.

I have tried what often felt impossible: How to bake with whole flours, good olive oil, and little to no sweeteners. I was raised in two cultures, Greece and Germany, that prize good grains and flours for their aromas and textures—this is what I hope to bring you now in baking.

Just a few recipes to entice you: Double Dark Chocolate Cookies with Olive Oil, Cornbread with Blueberries and Rye, and Savory-Sweet Oatmeal and Tahini Cookies.

Plus, the glorious Late-Summer Tomato Pie Bread on the cover, photographed by the extraordinary Karishma Pradhan of @homecookingcollective.

Want more? There is Berry Pie with Almond Oatmeal Crust. My Superpower Sourdough is made with the smallest amount of starter possible. And for the holidays you can nosh on Burnished Honey Hazelnut Hearts, Vanilla Crescents with Farro, and more.

I’m thrilled that @chelseagreenbooks took on this passion project which at times felt insurmountable. But here it is, and if you spread the word, I would be most grateful.

Pre-order now—it’s the single best way to support the book. It helps your local book store order copies to have on hand and it builds, what I hope, is lots of excitement for Baking with Ancient Grains. Thank you so much! by @mariaspeck

This is my Greek-inspired Honey Tahini Cake. Photographed by @homecookingcollective amazing Karishma Pradhan, and styled by yours truly using my German grandma’s cake lifter with roses 🌹 on the handle. Yes, there is such a thing!

It is an easy cake, using 100% whole spelt flour, better if made ahead, and baked with love in my new book — perfect for your holidays 🩷.

I will never forget the first time I met @sswane. Not just because she had cool glasses 😎 long before they were cool. We spent an evening together, sitting outside for dinner, in beautiful California evening light, reminiscent of Greece.

Stephanie was full of encouragement for the hard work of female bakers and millers, of which there were too few at the time. We had spent that day at @modcuisine with a small group of grain enthusiasts. Since then, I’ve been in touch with Stephanie on occasion and each time her words of support have had a lasting impact. They have kept me going through all the challenges working on this book. I will be forever grateful. 🙏

My Superpower Sourdough is a simple three step bread, using 100% whole flour, often packed with nutritious seeds, and only 1 teaspoon starter, even several weeks old.

My recipe in BAKING WITH ANCIENT GRAINS is long and detailed, and it tells you how exactly to get there, even if you use different types of whole wheat, be it locally grown and milled, from a national source, or milled fresh at home. I have been baking this loaf for years, and I have experimented with dozens of these flours.

It might take a few tries for you to get it right if you are new to baking whole flour sourdough bread, but I can assure you, you will master this bread. And if you need help along the way, I’m here for all your questions.

I am a home baker, I never had any professional bread training and I am proudly baking this loaf every week. 🍞

Memory of a lifetime: laughter at the book launch of my new “Baking with Ancient Grains“ with master baker @moepastries Maura Kilpatrick. The team at @Sofrabakery did an incredible job preparing eight (!) dishes from my book, including an auburn-hued sorghum cornbread with sorghum-spiced pecans, carrot top pesto with roasted pumpkin seed oil, a turmeric-laced salmon and spinach tart, reminiscent of the austere simplicity of pies in the Epiros region of Western Greece.

As a parting a gift, Maura handed me this beautiful Briozza, a cross between a pizza and a brioche. My brioche dough is made using hundred percent whole spelt flour.

Not shown: one of my favorite cakes, a delicate airy chocolate hazelnut cake with teff, and my oat and maple brittle.

From the bottom of my heart: ευχαριστώ, Danke, and thank you! 🩷

Her new book, Baking with Ancient Grains, just hit shelves this week, and on Monday, October 19th, she’s joining us live.

Cookbook author & food writer @mariaspeck joins us for BreadTalks: Baking with Ancient Grains to delve into her new book, Baking with Ancient Grains: Mediterranean-Inspired Recipes for Living Well.

Ancient grains bring bakers new flavors, textures, and possibilities, but working with unfamiliar grains can also be a challenge. Maria will share what makes each grain unique and how to use its characteristics to make flavorful baked goods, from sourdough breads and flatbreads to savory pastries, cakes, cookies, and tarts.

She’ll be in conversation with Blair Marvin, co-owner and head baker of @elmoremountainbread in Wolcott, VT and co-founder of @newamericanstonemills. Blair has built her bakery around locally-sourced, freshly-milled grains, so she brings a real-world perspective on making these grains work in a professional bakery.

If you’re ready to bring ancient grains into your own repertoire, this session is not to be missed! 🔗 Link in bio to register

I take grains and good flours very seriously. Mostly. by @mariaspeck

Happy publication day to BAKING WITH ANCIENT GRAINS, including the beauty of a flipped title on the cover. 🩷🥖🥨🍞🌾🧈🩷

I’m super-proud of this third book of mine, packed with stunning photography by the super-talented Karishma Pradhan of @homecookingcollective. We spent many weeks working together on it: I baked my heart out and styled the 75 recipes and she took the pictures. We spent much of it either in high concentration — or in laughter. I am grateful our paths crossed for this book. 📕

And I’m more than elated about the book launch party at @sofrabakery Thursday. 🙏
