Join us next Tuesday 13th October as we welcome Adam Foster, founder and winemaker of Syrahmi, for a tasting.⁠
⁠
A chef-turned-sommelier-turned-winemaker, Adam cooked in some of Victoria's and London's best kitchens before founding Syrahmi in 2004. The name blends "Syrah" with "ami", French for friend – they idea being "friendly Shiraz" or "friend of Shiraz". It's a nod to the vintages he worked with some of the Rhône's most respected producers, including Chapoutier, Stéphane Ogier and Pierre Gaillard.⁠
⁠
Today he makes Rhône-inspired Shiraz, Grenache and Mourvèdre in Heathcote, intervening as little as possible and letting each vineyard and vintage speak for itself.⁠
⁠
Drop in to meet Adam, try his wines and some Marion snacks – perhaps his Chardonnay with our zucchini flowers on toast.⁠

This week, our Head Chef Davy is celebrating the return of asparagus season with a new dish. Fresh asparagus is lightly charred on the grill, then served with a rich brown butter hollandaise and a generous scattering of bottarga.⁠

We’re pairing it with a glass of 2024 Envínate ‘Benje’ Blanco Listán Blanco from the Canary Islands, Spain. Its freshness and acidity cut through the richness of the hollandaise while complementing the savoury bottarga. by @marionwinebar

With more than 30 years in the wine industry, David has played a significant role in shaping Australian wine, and was recently named Gourmet Traveller WINE Magazine’s Winemaker of the Year.⁠

David now makes small-batch wines through @bicknellfc, a family project with Nicky Harris, with a growing focus on Lance Vineyard in the Yarra Valley — a historic site producing some of their most distinctive wines.⁠
