This week, our Head Chef Davy is celebrating the return of asparagus season with a new dish. Fresh asparagus is lightly charred on the grill, then served with a rich brown butter hollandaise and a generous scattering of bottarga.⁠

We’re pairing it with a glass of 2024 Envínate ‘Benje’ Blanco Listán Blanco from the Canary Islands, Spain. Its freshness and acidity cut through the richness of the hollandaise while complementing the savoury bottarga.
