Once again, before opening the doors of Momtabare, we’re bringing a taste of what’s to come to NOTO this Friday!

Momtabare is an upcoming hospitality project built around community, creativity, collaboration, and unforgettable drinking experiences. Mark and Kirill have prepared a one-night-only guest shift featuring three signature cocktails:
— Frozen gin sour with peach, mint and salted whipped cream
— One-sip Dirty Martini with jonjoli and kakhetian oil
— Refreshing Americano with beer foam (!) and orange

Over the past weeks, I interviewed hospitality professionals from Georgia’s bar industry to better understand the current state of cocktail culture, hospitality and the local market.

The first conversations feature: — Vako Loria (Spot Bar / Rooms Hotels / Adjara Group)
— Oleg Sychev (Noto Bar)
— Giorgi Gogiashvili (Flavora Distillery / Barbara Gastrobar)

We spoke about trends, pricing, staffing, local spirits, bar culture, distributors and the everyday reality of running bars in Tbilisi.

This is part of my ongoing research and conversations around modern hospitality culture in Georgia.
