200 YEARS OF MASTER MILLING

We've been milling flour in Chelmsford since 1824. We started out in Broomfield Mill, then milled at Moulsham Mill and finally moved to Chelmer Mill which was built in 1899, and where we still are to this day. Our mill, just like our flour, truly has stood the test of time.

TESTING THE NEW HARVEST

It's a busy time of year for our technical team, as wheat from the latest harvest begins making its way through the mill.

Behind the scenes, the lab carries out regular testing to understand the characteristics of the wheat and flour, helping us maintain the quality and consistency our customers rely on.

From assessing the new season’s crop to monitoring flour performance, it’s an important part of ensuring our flours continue to perform as expected in bakeries across the country.

BEETROOT INCLUSION

Adding beetroot to sourdough makes a delicious loaf with an earthy flavour and soft crumb. Ours is made using Manitoba - a very strong white bread flour, which aids greater gluten strength and structure needed to support the beetroot, while achieving a good rise and well-developed crust.
