Homemade Soft & Fluffy Naans

Makes 6 large or 8 medium naans

Ingredients

• 610g strong bread flour
• 300ml warm water
• 150g Greek yoghurt
• 60g melted butter
• 1 tsp instant yeast
• 1 tbsp sugar
• 11g salt

For the garlic butter

• Melted butter
• Crushed garlic
• Fresh coriander (optional)

Method

1. Mix all the dough ingredients together until you have a smooth, soft but fairly firm dough.
2. Cover and leave to prove in a warm spot for around an hour, or until doubled in size.
3. Turn the dough out onto a lightly floured surface. Flour your dough scraper and hands, then divide into 6 or 8 equal portions, depending on how large you’d like your naans.
4. Stretch each portion out slightly into a rectangle, then fold the edges into the centre. Turn it over so the seam is underneath and gently roll it under your hand in a cupping motion to form a smooth little ball.
5. Arrange the dough balls on a floured surface, leaving plenty of room between them. Cover and rest for around 30 minutes until they’ve puffed up a little. In colder weather, give them a bit longer.
6. Working with one ball at a time, gently roll out on a floured surface, turning the dough over as you go to prevent sticking. Stretch into your preferred naan shape.
7. Heat a non-stick frying pan until nice and hot. Add your naan to the dry pan and cook for around a minute, or until it starts to puff up and form lovely bubbles. Give the pan an occasional shake.
8. Flip and cook for another minute or so, until cooked through with lovely golden, charred patches. Adjust the heat if it’s browning too quickly.
9. Brush generously with garlic butter, then pop into a low oven, loosely covered with foil, to keep warm while you cook the rest.
10. Repeat with the remaining dough and serve warm. #recipe #naan #bread #curry #easyrecipe

No water, just egg whites.

Rich in colour, a beautiful belly, and a crumb that makes every detail worth it. Sometimes, the most interesting results come from doing things a little differently. 🤍

Who’s got an idea for episode three?

SUNDAY ROUND-UP

I can’t quite express just how much I’ve loved this week!!!!!

No soundtrack this week, so you can listen to the legends that are @thestrokes (I dropped my phone in a bowl of eggs beforehand, so sound quality may be reduced🌝)
