Seven years ago, a tortilla became a dream. Today, that dream is a community. 🌽💕
From day one, our purpose has remained the same: to bring a piece of México to Switzerland, one tortilla at a time.

Twelve nights of modern Mexican cooking in Zürich. 🇲🇽

Xolo takes over Freddy from 6 to 17 October. Oliver Oberlin cooks with patience, handwork and good product, and our tortillas and masa are part of it. So are the chorizo, achiote and orégano from Del Barrio @delbarrio.ch

There is no Mexican who wasn’t sent for the tortillas as a kid.

A few coins from your mamá, a cloth under your arm, and the line around the corner just before la comida. You wait, and the machine keeps you company. Clic, clac, clic, clac. A sound that wraps around you. Hypnotic.

“Un kilo, por favor.” Onto the scale, into the paper, warm against your chest.

And then the best part: el taco de sal. One hot tortilla, a pinch of salt, rolled in your hand before you even leave. On a good day, you kept the change too.

This is the heritage we bring to Switzerland. Same taste, same story. Made here, by Mexican hands. 🇨🇭🤝🇲🇽 by @masamor.ch

One cook, one comal, a full house. 🔥🔥🔥

Yesterday Gerardo Chico @esegerardochico from @fonda.ch took over the kitchen at @slurp.zurich and cooked brunch the way it happens at home.

Chilaquiles rojos, enfrijoladas, huevos rancheros and a roasted poblano burek. @masamor.ch tortillas with @delbarrio.ch chiles y cheeses. 🤌🏼

To drink, La Güera del Barrio, our helles brewed with rescued tortillas, and Baja California wines from @colectivocomestibles.ch.

On October 3rd, I’ll be taking over the kitchen at @lacatedral.ch for one night. @masamor.ch will be taking care of the maíz, while La Señora @delbarrio.ch will be providing the ingredients to ensure authentic quality and flavor.

Chef Xavi will be joining me with his usual menu, and @caribe_89 will bring his cumbia sonidera to set the mood for the night — as long as the floor holds up.

One night, two chefs and mucha cumbia.

Mexican food starts with Mexican ingredients.

Chile pasilla, ancho, guajillo, arbol, morita, chipotle, tortillas, tostadas, hibiscus, masa, achiote, totomoxtle, totopos, tatemadas, so much of what you’ll taste at Xolo is here thanks to @masamor.ch and @delbarrio.ch

They bring the ingredients, flavours and a little piece of Mexico to Switzerland that allow us to cook the food we believe in.

Without them, Mexican food in Switzerland simply wouldn’t be the same.

They bring us closer to the real flavours of Mexico.
We bring them into our kitchen, with respect, curiosity and a lot of love.

And together, we get to share a little more of Mexico with you.
