Good meat from @lumadelikatessen Hot fire. No shortcuts.

For our tacos, we use Abanico de Cebo a beautifully marbled Spanish pork cut from around the ribs, known for its deep flavour and juiciness. Grilled hot and fast, straight onto the taco.

For Cuello Negro, we use cow neck cooked slowly for 16 hours, pressed, grilled over high heat and covered in our deep, dark Mole Negro.

Two cuts. Two techniques. Lots of fire.

FUEGO. ALMA. XOLO.

EXPERIENCIA VEGANA 🌱

Not an alternative.
A Xolo experience of its own.

Vegetables, chayote, masa, chiles and all the things we love treated with the same fire, patience and craft as everything else on our menu.

For our vegetables and fresh chayote, we work with @marinello_picobello bringing us the quality and freshness we need to put plants at the centre of the plate.

Rooted in Mexico.
Cooked our way.

PEZ VERDE.

Hiramasa Kingfish, clean, delicate and rich enough to stand up to bold flavours.

We serve it with a creamy jalapeño gazpacho, chayote and macadamia. Fresh, slightly spicy, bright and balanced a dish built around the quality of the fish.

Mexican flavours, treated with our own approach.

Our Kingfish comes to us through @bianchi__1881 , connecting us with exceptional products here in Switzerland.

Día Nacional del Maíz🌽

For thousands of years, maíz has grown in the milpa, alongside beans, squash, chiles and other plants. It’s a living way of farming, shaped by Indigenous knowledge and carried forward by farmers across Mexico.

At XOLO, you’ll find maíz in our corn starter, tacos, tamales and tostadas. Different forms of an ingredient with a deep history, and traditions kept alive by the people who grow and prepare it.

Sin maíz, no hay país.

One cook, one comal, a full house. 🔥🔥🔥

Yesterday Gerardo Chico @esegerardochico from @fonda.ch took over the kitchen at @slurp.zurich and cooked brunch the way it happens at home.

Chilaquiles rojos, enfrijoladas, huevos rancheros and a roasted poblano burek. @masamor.ch tortillas with @delbarrio.ch chiles y cheeses. 🤌🏼

To drink, La Güera del Barrio, our helles brewed with rescued tortillas, and Baja California wines from @colectivocomestibles.ch.

Gracias a todos los que llegaron and to Slurp’s amazing staff. 🫰🏼

On October 3rd, I’ll be taking over the kitchen at @lacatedral.ch for one night. @masamor.ch will be taking care of the maíz, while La Señora @delbarrio.ch will be providing the ingredients to ensure authentic quality and flavor.

Chef Xavi will be joining me with his usual menu, and @caribe_89 will bring his cumbia sonidera to set the mood for the night — as long as the floor holds up.

One night, two chefs and mucha cumbia.

Mexican food starts with Mexican ingredients.

Chile pasilla, ancho, guajillo, arbol, morita, chipotle, tortillas, tostadas, hibiscus, masa, achiote, totomoxtle, totopos, tatemadas, so much of what you’ll taste at Xolo is here thanks to @masamor.ch and @delbarrio.ch

They bring the ingredients, flavours and a little piece of Mexico to Switzerland that allow us to cook the food we believe in.

Without them, Mexican food in Switzerland simply wouldn’t be the same.

They bring us closer to the real flavours of Mexico.
We bring them into our kitchen, with respect, curiosity and a lot of love.

And together, we get to share a little more of Mexico with you.

Mucho amor to Masamor & Del Barrio.
