I hope @northshorebeefs doesn’t come at me too hard because this clearly isn’t traditional 🤣.

Here’s one of my favorite sandwiches I grew up eating on a weekly basis - turned into a sausage. The North Shore Beef Sausage. 100% brisket trimmings, fine ground to give that roast beef mouth feel. Roast beef spice. American cheese. Bbq sauce. Mayo. Caramelized onions. Sliced and served on a sesame seed bun with even more bbq and mayo.

I ate this thing at 8am in like a minute flat. It’s ridiculous.

When I started this back up I knew it was going to be hard after almost 2 years away from doing it on my own. I could write 5,000 words and go on and on about different things. But at the end of the day, none of it matters. I’m really sad that after dedicating almost half my life to this craft, having no one to teach me, learning on my own, teaching other chefs and businesses how to smoke meats like they do down in Texas. At the same time - I’m also happy that because of all my hard work, I was able to feed so many people something that mattered so much to me. Saying bye to that also makes it that much harder. With that, sadly Oakey Dokey BBQ is donezo yall. It’s a hard decision but it’s the right one to make for the family. Thank you so incredibly much to each and every single one of you who came out and gave us a shot, and to our friends @monikerbrewery for taking a chance on us and giving us our opportunity ❤️. Some barbecue to try and break up your doomscrolling for a half a second and bring a moment of joy. Tomorrow is my birthday, and Friday is my first pop up back in quite some time. Between my back injury, everyone in the house being sick non stop, my car breaking down on me and everything else going on - it’s been a hell of a 2 months. Now that I’m coming back with my own barbecue with a lot more knowledge, experience, refinement and tricks up my sleeve - I want to really create something that’s my own and tells my own story. Stepping into 2026, slowly coming off of my back injury and I’m starting to feel better. As I try to figure out a long term plan, I am looking to get back to doing local pop ups to help bring in some money until we can figure out if a future in restaurants is even a viable career for me, or if I need to go back to the drawing board after 18 years in this industry - and find a new career path.

If there are any breweries, distilleries, breakfast joints, bars or restaurants, anyone with a food truck or trailer out there that want to help bring this barbecue back to Rhode Island I would love to hear from you and work with you! While still being out of work with my back injury, I’ve started to get back into 🎥. This year I want to do more. Sharing not only my story, but stories of my friends, of people I admire, stories of not just the joys but also the hardships we are all facing. Stories of triumphs and failures alike. I’m completely self taught and know my work is not perfect or may not even be good and I absolutely hate my voice. But I love to do it, I love to fail, because there is no growth or learning without failure.
