POSTS STORIES REELS TAGGED
We talk a lot about knowing where our food comes from.

We know the farm that grew our vegetables. We ask how our meat was raised. We look for single-origin coffee and chocolate.

But what about the grain in our bread?

Rice, wheat, and maize provide half of the world’s calories, yet grains remain one of the least traceable parts of our food system.

In our newest piece, Know Your Grains, Megan Wang follows grain from farm to mill to grocery store shelf and asks what it would actually take to rebuild regional grain economies.

The story is bigger than better flour or better bread. It’s about the infrastructure that connects farmers, millers, bakers, and eaters. It’s about rebuilding regional processing and storage, supporting regenerative farming practices, preserving grain identity, and creating food systems where we can know not only where our food was grown, but how.

And perhaps most importantly, it’s a reminder that transforming our food system doesn’t mean returning to the past. It means building something more regional, resilient, transparent, and connected.

Anyone attending Crafting Community: A Textile Arts Fair is going to be super lucky to taste the regionally sourced, organic goodness of @graindeadbread. Baked by Brooklyn-based baker @megginwang, Graindead is the type of bread that is meant to be broken together, in community with one another. Megan is an ardent advocate for regenerative grain farming. She started Graindead bread as a way to pay respect to the local grain economy and share the connection between the grains, the place they were grown, and the people who farmed them.

Make sure you stop by early to grab bread or biscuits, and if you just can’t wait, head over to Megan’s page to sign up for the weekly @graindeadbread preorder! taken in New York, New York by @megginwang

On National Cheese Lover’s Day, I wanted to help celebrate one of our most passionate cheese lovers of all, Anne Saxelby. She was a crusader for rural farmers of America and believed they produced cheeses as fine or more so than our European counterparts. At ASLF, we view impact as more than cost savings or GHG emissions reductions. Our apprentices work on sustainable farms from coast to coast, learning the hours, care and stewardship behind those more traditional metrics. When you support ASLF this giving season, you’re funding fully paid, hands-on training that changes how our food system works from the ground up. Donate today to fuel the next apprenticeship and the leaders it creates. Link in bio😉 by @megginwang

A month since starting Graindead Bread - a project that I’ve been dreaming up while in silent meditation & while living in a RV on the farm. But, actually, have been slowly working towards for many years (and at times quite far away from making a reality).

I’m so grateful to everyone who has showed up in many ways: friends who have tried my bread throughout the years and have seen it evolve & change, my first soft launch folks who gave me critical & helpful feedback, to my now regulars who I love seeing as frequently as I get to thanks to this project, to my partner who patiently calms me when I’m worried a new bake might not turn out & who also helps me think about the longevity and opportunity to educate folks about regenerative & organic grain farming through this project, and to the venues @boyfriendcoop @willoughbygeneral who have shared space this month so I can, in turn, share this bread.

Excited to keep baking for you all, slowly but surely, and continuing to learn more whole grains, how to bake with them and how to share the stories of the farmers & the land from which it all comes. 🌾👩🏻‍🌾 taken in Bedford-Stuyvesant by @megginwang

An important part of Graindead, to me, is the continuous expansion of learning what whole grain baking can be and where these grains come from. I had the pleasure of spending a day @stonebarns in their bakery, learning about the varieties they use, how each performs in terms of function & flavor and building more familiarity with how whole grain doughs feel.

And the day after, I got to spend the morning with Stuart Farr of Hudson Valley Hops & Grains, an organic grain farm in Ancramdale, NY. The care that Stuart has for the land and the seed and the potential for nutrition & flavor when you grow intentionally…well, it’s really quite incredible. I could share so much more about what I learned on his farm, so feel free to ask next time you see me.

It makes me so proud to source grains from farms like his. If only everyone could have access to bread that is better for you, and delicious. 🤔 Graindead is just a weekly drop right now but my aspirations for it are much more. Thanks for following along so far! by @megginwang

A tender flaky biscuit that is creamy yet savory from a blend of Glenn Spring Wheat, Renan Winter Wheat & Einkorn…coming up as a pastry special in next week’s loaf drop! 🍞 And one pick-up will get a cheeky tart surprise of raspberry jam (picked fresh from the community garden!) in their bag.

I’ve been away cooking for Climate Farm School and will be hosting family, but can’t wait to get baking again SOON!

Spent the week with @climatefarmschool connecting with incredible folks working across the regional food system in the Hudson Valley. It’s always such a beautiful time up at @hawthornevalley, and especially now as the leaves begin to turn.

A favorite day for me this week was our morning at @stonehousegrain learning about regenerative & organic grain farming — and their critical role in the region as the go-to provider for organic animal feed. Seeing the care that goes into their cover crop plan to return nutrients to the soil & cover the soil to improve drought tolerance (especially this summer!) and how they thoughtfully rotate crops and use animals to graze the land and and and… it is so strategic, thoughtful and a critical role in our food system here.

We also received an incredibly generous gift - a hugeeee amount of beautiful Glenn Spring Wheat Berries we then freshly milled together thanks to @sparrowbushbakery for lending us their table top! And made into a delightful sourdough pancake with caramelized apples the next morning. How wonderful to close a full circle in this way — and also, what I wish to be accessible to everyone every day. 🌾

So with that, I feel so grateful to have an abundance of wheat berries right now that I’m plotting on how to use for future @graindeadbread drops…stay tuned & sign up for the email list! 🙏🏼
