METRIC × MONOS

Here’s a look back at our collaboration with @monostravel, where two distinct disciplines found common ground through a shared appreciation for design, craftsmanship, and responsible business practices.

We’ve always been drawn to creative endeavors shaped by curiosity, an attention to detail, and a healthy appreciation for well-designed products.

For this project, we elected to use our existing Modicum packaging, made from 120 lb Mohawk Renewal Hemp Fiber White Rough paper. Paired with our custom-designed transparent coffee bags, the combination reflects our appreciation for materiality, texture, and the finer details of presentation.

Whether within coffee or beyond it, we value opportunities to work with people and brands who approach their craft with curiosity, conviction, and a willingness to explore new ideas. by @metriccoffee

Tour de Texas kicks off today — who’s coming to see us?

We’re bringing a special Limited Release coffee: Burundi Rubirizi.

Just 125 boxes are available: 25 now at our West Fulton shop and Milli by Metric, plus 25 at each Tour de Texas stop:

09/04 — @steadypacecoffee
09/06 — @strandedcoffeeclub
09/08 — @waywardcoffeeco

Grown at 1,750 meters, Rubirizi is a field blend of Red Bourbon, Mibirizi, and likely some SL34. It’s bright and layered, with ripe red fruit, citrus, black tea, gentle sweetness, and a clean, lively finish.

Farmers from Rubirizi have delivered cherry to Long Miles Coffee Project’s Bukeye washing station for years. This harvest is the first time there was enough volume to keep the coffee separate and present it as a traceable lot of its own.

50 boxes in Chicago. 25 at each Texas stop. Once they’re gone, they’re gone.

See you on the road. by @metriccoffee

Announcing: Metric’s Tour de Texas!

We’re taking Metric on the road this September for a series of brew bar takeovers with our friends at @steadypacecoffee in El Paso, @strandedcoffeeclub in San Antonio, and @waywardcoffeeco in Dallas.

To celebrate the tour, we have selected Burundi Rubirizi, a special lot from Rubirizi Hill produced in partnership with our longtime friends at Long Miles Coffee Project. Grown at 1,750 meters, Rubirizi is a field blend that reflects the complexity of coffee cultivation in Burundi, where Red Bourbon and Mibirizi grow alongside what is likely some SL34. Farmers from Rubirizi have delivered cherry to the Bukeye washing station for years, but this is the first harvest with enough volume from the hill to keep the coffee separate and present it as a traceable lot of its own.

Just 125 boxes will be released, with 25 available at each Texas stop and 25 back home in Chicago at both our West Fulton café and Milli by Metric beginning September 4.

Texas, we’ll see you soon. by @metriccoffee

Back on the menu and online for as a Limited Release is one of our favorite coffees — La Salsa by Benjamin Paz from El Cedral, Santa Bárbara, Honduras .

Benjamin’s dedication goes far beyond being a producer. He’s a true relationship builder who has humbly helped put Santa Bárbara on the map — not just regionally or nationally, but among the world’s best coffee-growing regions.

His farm sits at 1680–1730 meters above sea level, on volcanic soils with a special microclimate that lets the cherries mature slowly and develop remarkable complexity. This Geisha lot comes from his own Finca La Salsa and the surrounding El Cedral community, where he quietly supports neighboring producers, helping them improve quality and build more sustainable practices.

The coffee is a Geisha variety — known for its elegance, bright clarity, delicate florals, and refined sweetness. Benjamin processes this lot with great care using an anaerobic washed method: the cherries undergo a period of anaerobic fermentation before being fully washed, pulped at peak ripeness, and sun-dried on patios with meticulous hand sorting. That intentional approach intensifies the stone fruit character while preserving the clean, floral profile.

We’ve roasted La Salsa to a light profile to accentuate the vibrant citrus, sweet peach and nectarine, jasmine florals, and lively sweet acidity.
What moves me most about this coffee is the partnership itself. It’s built on trust, respect, and a shared belief in supporting farmers and creating real, long-term opportunities.

Benjamin’s dedication — as a producer, relationship builder, and someone who’s even taken top honors like the 2022 Honduras Cup of Excellence with Geisha from this very farm — inspires me deeply. I’m truly grateful to bring his work to your cup.

La Salsa is available now at Fulton Cafe + @millibymetric and online while supplies last. by @metriccoffee

This washed red caturra from Carlos Esteban Cortes is a fruit-forward, deeply sweet expression of Nariño’s high-altitude terroir. Grown at 2,150 meters, the coffee balances structure and clarity with a bold, clean cup-proof that careful, traditional farming still delivers some of Colombia’s most compelling coffees.

Carlos is a young producer with an old-school mindset. He tends his farm with intention, focusing on plant health, cherry selection, and consistency year after year. Beyond his own land, he is actively involved in the local cooperative-working alongside neighbors, sharing insights, and learning from collective experience.

The result is a coffee that speaks plainly and confidently. Clean and expressive, with notes of kiwi, chocolate orange and honeysuckle, this lot reflects both meticulous care and the strength of community. It’s a reminder that when producers are supported and knowledge is shared, everyone from farm to cup benefits. by @metriccoffee
