TUNA BELLY CRUDO w/ cheater guava leche de tigre, celery leaves, orange supremes, Lao Gan Ma chili crisp (more specifically the one with ferm. black beans), toasted sesame and green onions

CHEATER GUAVA LECHE DE TIGRE:
• Juice of 1 medium sized lime (ripe, yellow-green with thin shiny skin)
• Juice of 1/2 orange
• Orange supreme of the other 1/2
• 2 TBSP guava purree (if using jam, adjust with salt and hot water)
• 1/2-1 TBSP fresh ginger juice (optional, adjust to liking, wish I had on hand)
• Seasalt to taste (I added - small pinch approx. 1/8 TSP)

SOY MARINADE (for approx. 200g raw tuna steak):
• 3-4 TBSP light (Chinese) soy sauce
• 1 TBSP mirin
• 1 TBSP rice vinegar
• 1 TSP pure (roasted) sesame oil

Fresh tuna plug: Stan & Clint from @catch__cook_curacao
*I did flash freeze the fresh tuna belly, just as extra measure

Surprisingly prepped pretty fast and slurped this within 5 minutes, because I was running late for my weekly run and wanted to have some time to digest. Light, a little fancy and a lot of flavour!

First time at the Chinese Consulate’s annual meeting and CPC’s 77th anniversary. Looking forward to further reconnect with my roots here at home and to open a dialogue as third culture kids that are born on Curaçao, with roots in the far east 🇨🇳🇨🇼

Friend of mine recommended this cute little Taiyaki shop @tokyo.taiyaki.story in The Hague near the central station. And of course I had to try it when I was in town. As I walked up, there was a small cue all waiting in line to order the famous Japanese fish-shaped waffles filled with either Matcha cream, anko (red bean paste), anko with miso or chocolate cream. They got many other sweet and savoury options that also looks amazing. They were handing out some curry samples as they will be adding that to their menu very soon.
Next to the food they also have a range of Japanese canned refreshments and teas like ceremonial grade matcha, hojicha (roasted green tea) etc.
I tried a hojicha latte for the first time, quite interesting due to its nutty flavour.

Since I was somewhat on a timeline, I only ordered 2 Taiyaki’s. One with matcha cream and one with anko and miso. They got a crispy exterior and chewy, yet fluffy interior. If you’re into texture and contrast, you will like it! So definitely recommend trying this authentic slice of Japan in The Hague @tokyo.taiyaki.story

For my own record: Wim Hof breathing exercise 2x before plunge. Water temp approx 6 degrees C. 3m 40s submersion (that felt like just 2 min)
