I can't believe it's been a year already. Every moment with you has been amazing--not because life has always been easy, but because you give me strength. You give me love, patience, and courage, and for that, I am forever grateful. I love learning more about you and growing with you. I can't wait to travel and eat more with you. I love you more and more every day, and I feel so lucky that I get to do life with you.
One down, forever to go. ❤️

TANDEM TURNS THREE 💚

If Part 1 was about the people we had the privilege of creating with, Part 2 is about the people who have given us a reason to keep creating.

Three years of Tandem means three years of familiar faces, new faces, birthday dinners, first dates, anniversaries, celebrations, quiet meals, long conversations, and tables that somehow turned into memories.

To everyone who has walked through our doors, whether you’ve been here since the beginning or this was your very first time, thank you.

Thank you for trusting us with your celebrations.

Thank you for coming back for the dishes you remembered, and for trying the ones you weren’t sure about.

Thank you for telling us what you loved, what you didn’t, what you wanted more of, and what you still remember months (or years) later.

Thank you for bringing your friends, your families, your partners, your colleagues--and sometimes, just yourself.

A restaurant is, at its heart, just a room with a kitchen and a bunch of people trying to make something worth remembering.

It only becomes Tandem because of the people who fill that room.

And then there are the people behind the scenes--our friends and family who have seen the good days, the bad days, the late nights, the panic, the celebrations, and all the “kaya yan, tiwala lang” moments in between.

The people who listened to us talk endlessly about food.

The people who showed up.

The people who believed in us even when we were still figuring out what exactly Tandem was going to become.

Three years in, I still don’t think we have it all figured out.

But maybe that’s the beauty of it.

Tandem has changed so much since that first learning, keep questioning, keep making things, keep feeding people, and keep finding new reasons to gather around a table.

So to everyone who has been part of these first three years--thank you for growing with us.

Here’s to whatever the next three years bring.

Hopefully a little less stress--probably not. :/

But definitely more food, more drinks, more stories, and more reasons to gather.

TANDEM TURNS THREE 💚

The past three days have been some of the days I’ve felt most grateful to have a three-year-old.

Part 1 of 2, because there are simply too many people to gush about.

First, the people we’ve had the privilege of creating with.

Cara and Luis.

Incredibly talented, creative, and not an ounce of ego between them. An eight-hands dinner in our tiny kitchen was no easy feat, but working with these two somehow felt effortless. Quick conversations, very little explanation--we just got it.

Christine and Jo of Half Saints.

Our first time working together, and despite their incredibly busy schedules, they chose to celebrate with us. That means more to me than I can say. I’ve always had so much love and respect for Half Saints (because, duh, have you tried their food?), and working with them only made that love grow.

They made us feel like they weren’t just there to collaborate, but to celebrate us.

Also, sold out in less than an hour?! Part 2 na daw! 😂

CJ and Kyle of Pocket Makati and Guesthouse Coffee, and Jo and Mandrake of Kubo Coffee.

Anyone who knows me knows how much I love coffee, but more than the coffee itself, I’m constantly amazed by the love and care these people pour into their craft.

Kubo’s commitment to transparency, quality, community, and the people behind every cup is something I deeply admire. And how lucky were we to have the 2025 Philippine World Aeropress Champion with us that day?

And because Guesthouse doesn’t have a brick-and-mortar yet, I know I’m not the only one looking forward to finding them--and their Baguio Bloom--wherever they pop up.

And last, but definitely not least, our Tandem team: Day, Dion, Jake, Janela, Karyll, Keithdy, Kyle, and Mark. (Alphabetical order talaga😂)

Tiny in number, but grand in talent.

We could not have done these three days or the past three years without them. Their passion, care, and pride in what they do is something I’ll always be grateful for.

Three years of learning, creating, laughing, stressing, eating, drinking, and figuring things out together.

And if this is what having a three-year-old feels like, I'm very grateful to be this tired. 🩷 by @mikeelopez.tan

Meeting @chefvickycheng back in 2018 was special, but finding out he remembered me at the Philippines’ inaugural Michelin Guide ceremony was completely unreal.

So when we took a quick trip to Hong Kong, dining at one of his spots was non-negotiable and we chose his newer restaurant, @wingrestaurant_hk
Every single bite was pure magic. It delivered amazing techniques without a drop of pretentiousness—retaining that cozy, family-style warmth, just elevated 1,000x. It was truly incredible and we walked out telling ourselves we’d try Vea on our next trip.

Well, the universe moves fast.
While wandering Kowloon Walled City Park the next morning, a text popped up from Chef Vicky inviting us to Vea that very night. Of course, we said yes.

BEST. DECISION. EVER!
@vea_hk was a total knockout—an absolute masterclass in creativity, flavor, and technique. Even the spirit-free pairing left me speechless. Add in a quick gelato stop at @lizandtori_hk , paired with flawless, thoughtful service across every venue (shoutout to Neil and Adele!), and it’s safe to say these were easily two of the best meals of my life. ❤️ taken in Hong Kong by @mikeelopez.tan

Three years of cooking together, exploring new things, and making a lot of friends along the way. And if there’s one thing we’ve learned, it’s that the best things we’ve done have rarely been done on our own.

So for our third anniversary, we’re bringing some familiar faces back around the table, welcoming a few new ones, and celebrating the only way we really know how: #InTandem.

🍽️ September 26 — For Keeps
An 8-Hands À la Carte Collab Dinner with Chefs @caramariamichelle and @lululocsin, two friends who have been part of Tandem’s story in their own ways.

🥐☕️ September 27 — A Sunday Special
Our Sunday brunch made extraordinary with @halfsaints, @pocketmakati, and @guesthouse.coffee. Pastries, coffee, and some of our favorite people all under one roof!

🎞️✨ October 1 — Fleeting Memories
And finally, our 6th tasting menu. A look back at the dishes, ideas, and memories that have stayed with us over the last three years, brought back to the table for one more round.
