And she's back! People can't seem to get enough of the dishes prepared by @rhearizzo of @mrssaldos that she is back at Balmori Suites at the @powerplantmall in Rockwell until January 5, 2027!

See her dishes here (and I included the menu... just pause the video).

We had a great time! Congratulations, Rhea!

Flow x Tandem present: Chinoy? 🇨🇳🇵🇭

Chefs Kevin Uy and Gabriel Ong of @restaurantflow.mnl welcome chefs Alex Tan and Mikee Lopez Tan of @tandem.mnl for a two-night collaboration that delves deep into culture and identity.

Dubbed Chinoy?, the nine-course menu explores the chefs’ shared Chinese-Filipino heritage through memory and reinvention, while staying faithful to Flow’s Peruvian-Filipino perspective and Tandem’s global lens.

On the beverage front, @pwxchange has curated a supplementary wine pairing for those who seek it.

Chinoy? marks a special milestone for the host restaurant as Flow’s first collaboration. Initially announced as a one-day-only affair, the collaboration has been extended with a second night following an influx of reservations—don’t miss the opportunity to secure your tables via @restaurantflow.mnl.

I’ve never felt so prepared and so unprepared for an event at the same time.

100/10 the craziest service I’ve ever had to go through.

85 cups ordered in an hour.
45 minute wait time.
7 different, complicated drinks designed for a slow service.

It was fucking awesome.

I jokingly say I would never wish this kind of rush on any barista or bartender, given the tools we had that day. Things definitely didn’t go how we planned, but there’s something pretty special about being thrown completely into the deep end with people you trust.

Because underneath all the chaos, this was exactly why we do this. To make coffee and drinks that are a little different. To take something we love and turn it into something other people can enjoy. Getting to do that while celebrating three years of Tandem was a privilege.

A huge thank you to chefs @mikeelopez.tan and @alexcraig.tan of @tandem.mnl for always giving @guesthouse.coffee an avenue to share and express our passion.

To Jo and Mandrake of @kubocoffee_ , for always supporting us and making sure everything outside the bar is handled while we’re busy losing our minds behind it.

To Day, for jumping into expo and guiding us through the weeds, and making sure nothing got neglected while we were getting absolutely buried.

To @ak.arw , for always being my reliable spro man, and to our bosses at @pocketmakati for letting me bring Pocket’s drinks to the Tandem audience.

Special mention to @dumdumdums for helping with everything from R&D and batch prep to ingress and egress. And to my ever-so-supportive waifu @smolpiepie for documenting the whole thing so beautifully.

And lastly, to everyone who came. Friends, familiar faces, and those who probably had no idea who we were. Thank you for giving us a chance.

I hope you enjoyed the drinks as much as we enjoyed making them. And if a cup didn’t quite live up to your expectations, I hope you’ll give us another chance. I’d be more than happy to make you a new one at one of our upcoming events.

Looking through these photos, I think that’s what I’ll remember most.

Not the wait times.
Not the 85 cups.
Not even the chaos.

Just the people.

Happy 3rd birthday again, @tandem.mnl 🫶

Three years of Tandem.

We spent our anniversary doing what we love most: cooking, creating, and filling the restaurant with people we love. After three incredible days of service, we’re still trying to take it all in.

To Cara and Luis, thank you for stepping into our tiny kitchen and creating with us. An eight-hands dinner was no small feat, but somehow, it just worked.

To Christine and Jo of @halfsaints, and our friends from @pocketmakati, @guesthouse.coffee, and @kubocoffee_, thank you for choosing to spend our birthday with us. Sunday was crazy! We sold out in less than an hour, and we’re still overwhelmed by the love and support.

Most of all, thank you to everyone who walked through our doors that weekend, and everyone who has walked through them over the last three years. Whether you’ve been here from the beginning or only found us recently, thank you for giving us a reason to keep doing what we do.

We’re a small restaurant with a small team, and none of this happens without the people who keep showing up for us.

Three years down, and hopefully many more meals to go. See you all again soon. 💚

79 Michelin dates later… and we’re still eating our way through Manila. 😂🍽️❤️

For #79, we landed at Michelin Selected @tandem.mnl at Greenbelt Mansions. ✨

Plot twist: the last week of the month is strictly à la carte, while the other 3 weeks are for their tasting menu. 👀 So yes, timing matters!

And the sweetest part of the night? Meeting one half of Tandem — the charming Chef Mikee Lopez Tan. 👨‍🍳🤍

Good food. Great company. Another Michelin date unlocked. 🔓✨

79 down, 11 more to go in metro Manila!

Three years into Tandem, we’re celebrating with two friends who’ve been a big part of our story from the beginning: Chefs Cara Davis @caramariamichelle and Luis Locsin @lululocsin.

Cara is best known for her maiden restaurant @halong.restaurant, but her cooking has taken shape across some of the world’s most celebrated kitchens, from Eleven Madison Park and Alinea in the US to Arzak in San Sebastián, before she went on to open Mestixa in Tulum.

Luis, meanwhile, cut his teeth in New York with the Jean-Georges restaurant group before coming home to cook at Metiz. He now runs his private dining concept, Crispy Pork Fat, while preparing to open a restaurant of his own next year.

For one night, we’re squeezing all four of us into one kitchen for an 8-hands à la carte dinner featuring 12 exclusive dishes, bringing four distinct cooking styles to the same table and celebrating the friendships we know are 𝙁𝙤𝙧 𝙆𝙚𝙚𝙥𝙨.
