first of November, a sunday, a new month, same goals, same hopes… 🍊

If you had told 24-year-old Big 4 employee Mina what her life would look like now, she would have been SO shocked.

Here I am, living abroad, chasing my dream career, teaching my second-ever group pilates class and genuinely living my best life. I have the MOST supportive partner, friends and online community who make me believe in myself a little more every single day.

I can’t thank you enough for being here and sharing this little life journey with me. Thank you 25000 times for being part of it! 🥹💗 #pilates #lisbon #contentcreator #fitness #pilatesinstructor by @min_fits

(lower calorie) PEPPERONI PIZZA ✨
479 calories • 28g protein for the whole

🍕 the dough is only 280 calories and the whole pizza is 479 calories with 28g protein, no cottage cheese and no Greek yogurt

makes 1 pizza, about 23 to 25 cm
Dough:
50ml almond milk (sugar free)
3g sugar
3g instant yeast
80g flour
pinch of salt
Toppings:
20g tomato sauce
a little dried basil
30g grated low fat mozzarella
25g turkey pepperoni
50g chicken breast deli meat

Instructions:
1. warm the almond milk slightly, add the sugar and instant yeast and let it sit for 5 minutes.
2. add the flour and salt to a bowl, pour in the milk mixture and mix with a spatula first. then knead by hand for a few minutes.
3. shape the dough into a ball and place it in the middle of the bowl. cover the bowl tightly with cling film so no air gets in. wrap the bowl in a blanket to keep it warm and leave it on the counter for about 2 hours. the dough should almost double in size and have bubbles on top.
4. preheat the oven to 210°C.
5. move the dough onto a floured surface and roll it out with a rolling pin as thin as you like. mine was very thin and came out about 23 to 25 cm. shape it as round as you can.
6. place it on a baking tray lined with parchment paper.
7. mix a little dried basil into the tomato sauce, then spread 20g of it on the dough.
8. top with 30g low fat mozzarella, 25g turkey pepperoni and 50g chicken breast deli meat.
9. bake in the preheated oven for 12 minutes.

tip: I used instant yeast, but giving the dough a couple of hours to double in size really helped.
save this for your next pizza night 🙏
