Another A1 bakery in Chicago 🥐

@mindysbakery lives up to the hype and then some.

What we ordered:
🥯 Everything bagel with chive cream cheese
🍓 Raspberry crumble bar
🍪 Chocolate chip cookie
🍌 Malted Banana Grand au Lait

The coffee and raspberry crumble bar were the standouts for me. The banana flavor tasted natural and wasn’t overly sweet, while the raspberry filling was rich, slightly tart, and balanced perfectly with the sweeter crumble.

Definitely worth a stop next time you’re in Chicago!

For the first time in Joiners history, we welcome back a repeat guest: Mindy Segal. A longtime friend of the pod, Mindy remains one of our favorite people to talk to. She’s funny, fearless, deeply thoughtful about hospitality, and never especially interested in keeping an opinion to herself (but she’s working on it). She continues to hold it down at Mindy’s Bakery, the deeply personal neighborhood shop where weekend lines wrap around the block, the pastries inspire cult-like devotion, and her team has room to grow, experiment, and practice their craft. She comes to the studio bearing a birthday cake for Danny, teases an intimate new concept, and catches us up on everything else. Mindy’s Bakery in Wicker Park Chicago is known as the best bakery (@chicagotribune) and number 1 bagels in Chicago (@beli_eats), so I had to try it. @mindysegal was also selected as an “Outstanding Pastry Chef” by the @beardfoundation.

✨ What I grabbed:
• Sesame bagel
• Hot fudge babka
• S’mores croissant
• Seasonal grand au lait malted banana

💭 Thoughts:
The spot blends Eastern European, French, Italian, and Middle Eastern influences, and you can tell in the variety. Got in line at 8:55AM and got everything within 9 minutes. Super efficient.

The banana malt was sooo good 9.5/10. Really unique, more of a dessert drink, not too strong on coffee but still there.

The bagels were great once heated up 9/10. Before heating they were a bit hard, but after they had a really nice texture and unique flavor. The giardiniera cream cheese wasn’t my favorite though, a little too much going on compared to simpler cream cheeses 5/10.

The s’mores croissant was almost perfect 9.6/10. Flaky, crispy on the outside, soft on the bottom, and great chocolate flavor without being too buttery.

First time trying babka and I get the hype now 9/10! Kind of like a mix of cinnamon roll and bread. Even better warmed up.

I recommend heating up all the pastries before eating because they taste so much better warm.

Service was amazing, the line moved fast and everyone was super friendly. The space is cute but seating is limited. Mostly outside by the window where people line up and a couple benches.
